Sloppy Joes II
I don't really like sloppy joes, and I made this for my hubby and my daughter...however, he was running late and I ate one...almost didn't leave him any...oops! They were yummy yummy yummy! No more manwich for us! UPDATE: Made these again and dh said that they were better than the name brand! He used the word delicious!!!

Stuffed Zucchini
I mostly followed this recipe. I had defrosted ground beef instead of sausage and I'm sure it would have been better with sausage. I also cooked my zucchini a bit in the oven in some water face down as it was the size of a tree and I didn't want it to be too tough. Also, I totally forgot the cheese...not sure how that happened...rough day, I guess. Anyway, it was good and I'll do it again. Thanks for reminding me of such a great way to use those monster zucchini that hide in my garden!

Smothered Mexican Lasagna
I enjoyed this, although it was my gotta use up leftovers in the fridge meal, so I didn't exactly adhere to the recipe. I used corn tortillas soaked in some chicken broth because I find that making a casserole out of flour just gets them too soggy. I picked this recipe to use the ricotta and I'm not sure I enjoyed it in there...it seemed out of place, but again, since I didn't follow the recipe exactly, I'm going to rate on what it would have been, rather than what it was. I added refried beans which competed with the ricotta. Next time I'll use one or the other. Also added some left over fried rice, some fresh garden veggies and the tomatoes and salsa were home canned...like I said...a leftover casserole night. Thanks for the idea!!!
