Chicken Tortilla Soup I

I have fallen in love with chicken tortilla soup lately and came here to find out how to make it myself. (At $5 a pop at the local restaurant, it was getting pricey!) My husband declared this is the best soup EVER. I love it because it is hearty with the beans and hominy- more of a meal soup than just a side dish. I quadrupled the recipe and have 3 ziplock bags for the freezer. Delish. Delish. Delish!

Slow Cooker Pulled Pork

I had never made pulled pork which was a big deal since I've lived in the south for over 10 years. My son LOVES root beer so I knew it would be a hit with him. And it was. This came out so tender and yummy. We let the leftovers sit in the juice which made it all the more tender. Yummy!

Bread Machine Garlic Bread

I made 2 loaves of this for a church function and it was PERFECT! My friend called me after to rave about how the garlic perfectly balanced the lasagna it was accompanying. I was nervous because the batter looked a bit wet when it was first kneading, but it came out just fine.

Baklava

My husband LOVES baklava and I promised to make him some. I found this recipe and decided to conquer my fear of phyllo. I made it just in time for the Super Bowl party we had to go to and it was a H-I-T. I had people I don't even know seeking me out to gush about how yummy it is! Because I was trying to make the party, I didn't let my dough thaw fully so it crumbled into pieces. I just pulled out what I needed to make the layers and went with it. It was no problem. The baklava still came out beauifully. I am back for the recipe with the first part safely in the oven. (that part's not hard) I did let my dough thaw before using it this time and it was much easier to work with! (and I didn't let it sit so long that it was sticky.) Can't wait for this batch to come out of the oven!

Chocolate Peanut Butter Fudge

I was scared to make this but I have a LOT of evaporated milk that I won't use and a bunch of sugar that wouldn't fit into the container. Thank you Proofhead for saying not to monkey with it...it worked! My husband all but licked the pan clean and I've got to make at least 2 more batches!

Breakfast Casserole II

This is one of my famous recipes. When my friends have a brunch, I'm not asked what to bring, I'm told to bring this! It freezes well too so I make double batches and leave it in the freezer to thaw the night before and bake in the morning.

Lemon Meringue Pie III

I have ALWAYS been afraid of making meringe but I have to perfect a lemon meringue pie for my mom by Thanksgiving. This one was very yummy (had the make your mouth pucker factor!) and the meringue was great. I might have been able to whip it longer but was afraid to.

Butternut Squash Soup II

I had this at a friends house one time and was looking for it again but didn't want anything to complicated. This was PERFECT. It's very autumny! I served it with some parmesan and garlic croutons which was delicious. My friend served it with shreaded monerey jack cheese that nicely melted on the top...that was perfection. Update: This is my most asked for soup but I won't make it until October. I bought a soup toureen to serve it in for a presentation as great as the soup!
