Sweet and Spicy Sweet Potatoes

This was a great way to serve sweet potatoes (although the little folk found it overly spicy). I used half the oil and paprika, seasoned salt instead of poultry seasoning and added 1/2 t. cinnamon. Excellent with meat dishes.

Australian English Trifle

A light, pretty dessert. Next time I'd pour some liquid over the cake - the cake stayed a bit dry. I didn't have port wine gelatin, I used strawberry gelatin and replaced 1/3 c. of the liquid with wine. I also doubled the custard - next time I'd triple it, since the trifle could have used more custard.

Maple Hot Chocolate

Mmmm, this was fabulous! Worth the extra effort. Cut the butter to 1 tsp., no more is needed, and 8 marshmallows in total is plenty. But treat yourself to this.

Indian Curried Barley Pilaf

This looked great, but we found it disappointing - bland and boring. If you do make it, double the spices. You can also cut the butter to 2 tsp. oil.

Elegant Pork Loin Roast

Excellent. I keep kosher so I used a brisket. I rubbed it with the Dijon mustard, brown sugar and thyme and put in the crock pot. Then I boiled the apricots, prunes, wine, apple juice, cloves, ginger and allspice and boiled it for fifteen minutes until thickened. I poured the sauce over the meat and cooked it on high for an hour and on low for eight. It was delicious.

Chicken Honey Nut Stir Fry

After the reviews, I found this disappointing. It wasn't bad, it just wasn't particularly good either. I doubled the veggies and sauce and added some cauliflower, half a red pepper, minced garlic, salt and pepper. A healthy recipe but nothing special.

Blueberry Pound Cake

Yum! This was perfect. I used 3/4 c. oil instead of 1 c. butter, but followed the rest of the recipe exactly. A delicious, moist cake. Thanks for sharing.

Orzo with Parmesan and Basil

Yum. I sauteed a clove of garlic in the melted butter before adding the orzo and used a bit less cheese. This was a bit too sophisticated for my younger ones but the older kids and hubby loved it.

Jenn's Out Of This World Spaghetti and Meatballs

This is excellent - with a few changes. 1. Cut the tomato paste to two cans (12 ounces) 2. Use 2 cups of liquid, substituting some of the water with wine (I used 1/2 c. wine, 1 1/2 c. water) 3. cut the sugar to just 2 T. 4. add 1 tsp each of seasoned salt and Cajun. With these changes, this was a hit. For the meatballs I used ground chicken and omitted the cheese. I served them over rice. The kids wanted triples.

A Firefighter's Meatloaf

I'm not sure what went wrong, but this didn't go over well here. The meatloaf was fairly moist and flavorful, but the we found the salsa off-putting, and the flavor a bit odd.

Big Soft Ginger Cookies

I was in a rush, and hate using margarine, so I decided to make these as oil-based bars. I used 2/3 c. oil, added 1 T. vanilla, used half brown sugar and half white, and juice instead of water. I made one and a half time the recipe for a 9x13 pan and baked it for about 1/2 an hour. The result was a very flavorful, dense bar that was amazing with a glass of milk.

Melt-In-Your-Mouth Meat Loaf

This is an exceptionally moist meatloaf. I didn't have time to put it in the slow cooker, so I just baked it at 350 in the oven for a bit over an hour. I also used soy milk instead of regular, and added Italian seasoning and garlic powder.

Pecan Pie V

Since corn syrup is hard to obtain here, I've been looking for such a recipe for years. However, when I made this pie, I found that I missed the sticky richness of corn syrup based recipes. If you do make this, throw in 1/2 c. chocolate chips and extra pecans.

Potato Spinach Casserole

This is a nice, creamy side dish, and a great way to get kids to eat spinach - my crew all had doubles. I used plain yogurt instead of sour cream to cut calories. A dash of garlic powder would be a nice addition.

Oven-Fried Catfish

Disappointing - dry and bland. I used sole instead of catfish, but I can't imagine this being good on any fish. The only thing that saved this fish was Tartar Sauce I from this site.

Pumpkin Stew

I adapted this for a crock pot. I browned the meat and then added onion and garlic. I then transferred it to the crock pot along with the ingredients listed as well as a few potatoes, a large sweet potato, 2/3 c. of wine, parsley, onion powder, and basil. I cooked it on high for six hours and it was a really hearty, satisfying stew.

Apple Betty

The entire family loved this! To make it a bit healthier I used half whole wheat flour, oil instead of butter, and cut the sugar from 1 c. to 1/2 c. brown, 1/4 c. white. This is winner!
