Sweet and Nutty Moroccan Couscous

This was excellent. I used chicken broth instead of vegetable, cut the cinnamon to 1 tsp. (which was plenty), and omitted the nuts since my kids aren't fans. The result was a delicious and different side dish, great with roasted chicken.

Sweet and Sour Beef and Cabbage

This is filling and good, although a bit bland. I used ground chicken rather than meat to keep it healthier, and shredded cabbage for ease. To up the flavor I sauteed a few cloves of garlic with the onion, and used seasoned salt, Montreal steak seasoning, and smoked paprika to spice it. It works well over rice.

Light and Fresh Dressing

Nice, flavorful dressing. I used olive oil for better flavor and cut the sugar in half. I didn't want pieces of onion in my dressing (nor did I want to dirty my food processor) so I used dried onion flakes with excellent results. This makes loads - a recipe scaled down to 1/4 of the current one was plenty for my seven eaters.

Slow Cooker Pumpkin Turkey Chili

This is filling, easy, and fairly tasty. Like others I first sauteed the onion (and a few cloves of garlic) before browning the meat. Then I tossed everything into the crock pot, along with a sweet potato, and some salt and pepper, and cooked on high for about four hours. The final product was good but not as rich and full-bodied as I had hoped. A shake of cinnamon helped bring out the flavor. The kids almost all had doubles, and that counts for a lot.

Ghirardelli Chocolate Mousse

YUM! I didn't have Ghiardelli chocolate, but just used decent quality chocolate and this was excellent. Most mousses I've made call for cooking the egg yolks - which too often results in tiny bits of cooked eggs in the mousse (and yes, I do mix some of the chocolate mixture into the eggs before adding the eggs) so I loved the way this recipe used the entire egg, not just the yolks, and didn't cook them. My family enjoyed every last bite.

Caramel-Apple Crisp

Oh my gosh - this is SO good. I used a mixture of half caramel syrup and half thick caramel cream (the kind sold as a spread). I also added a dash of nutmeg, and used an additional two apples. The result was a sublime dessert.

Italian Vegetable Soup

What a fabulous meal in a bowl! I was missing some ingredients so I made some improvisation. I used ground chicken instead of beef, baked beans instead of kidney beans, and frozen green beans instead of canned ones. Like others, I found it needed a lot more water - 6-8 cups instead of 2. I didn't have any crusty Italian bread to serve this with, so I made some pita chips (split the pita open, spray with oil spray, sprinkle with granulated garlic and/or zaatar, cut into wedges and bake until they begin to toast) and used them. It was a fantastic combo!

Creamy Apple Cinnamon Raisin Oatmeal

This is a tasty, hearty breakfast. In order to make it creamy, I subbed half the water with milk. I also added the apple and raisins in with the oats so they'd get slightly softened. Next time, I'd add them even earlier.

Spicy Turkey Burgers

These burgers are packed with flavor. I added about 10 oz of defrosted frozen spinach for more nutrition and color. The spices need to be adjusted - and usually lessened (1 T. of pepper or 3 T. of paprika for example, would make these burger inedible). Great in a pita with some tehina or hummus.

Mushroom and Swiss Chicken

Yum! I made this with whole chicken pieces, and roasted it uncovered for a little over an hour. I left out the cheese, and used chives instead of green onion. It came out moist and bursting with flavor; my family loved it.

Roasted Roma Tomatoes and Garlic

Yum! These are so easy and so delicious. I served it as a side dish with chicken and rice and it was just the burst of color and flavor we needed. I used crushed garlic which I rubbed into the tomatoes, and dried basil.

Best Cherry Pie

This was good. Like others, I used cornstarch instead of flour and cut the sugar to 3/4 cup. It was still pretty sweet. Next time I'd add a teaspoon or two of lemon juice. It looks really pretty and holds together nicely.

Creamy Garlic Salad Dressing

This was good, although without modification it's pretty bland. I upped the steak sauce to 2 tsp, and used 1 T. of vinegar. I also added salt, pepper, and onion powder, and used fresh crushed garlic rather than powder. And no MSG! With the changes it was tasty.

Dill, Feta and Garlic Cream Cheese Spread

This was a nice flavor-packed spread for rolls. I couldn't find feta cheese so I used a salty white cheese with a similar consistency. I needed to use about 1/2 cup of sour cream to make it smooth and spreadable - if I wanted to use this as a dip (and it would make a great dip) I'd use use a full cup.

Lemon Lush

This is so light and luscious. I added 1 T. sugar to the crust since I like slightly sweet crusts. It was baked in just 15 minutes. Following reviewers, I used confectioner's sugar in the cheese layer, which made for a very smooth taste, and added 1 T. lemon juice. I couldn't get lemon pudding, so I used vanilla, and subbed 2 T. of the milk for lemon juice (next time I'd use more), and 1 T. lemon rind. I skipped the whip - it was good already, it felt like gilding the lily.

Grilled Chicken Adobo

This was excellent. I followed reviewers' advice and cut the soy sauce to 1 cups while upping the water to 3 cups. I also added a dash of liquid smoke which gave it fabulous flavor. I only had bone-in chicken, so I put five chicken thighs in the sauce (turning them in middle so they all should be submerged at some point) and cooked for 40 minutes. Then I transferred to a pan and broiled in the oven for five minutes. I boiled the sauce a little more to reduce and then spooned some over the chicken, as well as over the rice and broccoli I served as sides. The house smelled fabulous and the whole family loved this supper.

Baba Ghanoush

This looked good on paper, but didn't go over well once I made it. I cut the lemon so it wouldn't be terribly sour but the flavor was still disappointing. My family was a lot happier when I roasted an eggplant and blended it with a bit of mayo, a little sugar (I know that sounds strange, but it took off the bitter edge), and a dash of salt and pepper.

Addictive Pumpkin Muffins

These are tasty - the raisins and the nuts add bits of crunch and flavor. However, they are rather dense. I used half regular flour, half whole wheat, and cut the sugar in half (NO more is needed).
