Chocolate Mocha Cake I

This would get five stars for moist and ease, but I'm giving it four because I could barely taste the coffee - and that was after doubling the coffee powder. I used soy milk instead of regular and replaced half of the oil with applesauce; both changes worked well. I frosted it with coffee butter frosting from this site, that helped up the coffee flavor a bit.

Coffee Butter Frosting

This is a rich, easy to work with frosting. If you want strong flavor use 1.5 times the amount of cocoa and make the coffee very strong (doubling it will throw off the consistency). This make very little frosting - to cover the top and sides of a 9 inch round make 1.5 times the recipe, for two layers, double.

Baked Oatmeal II

A nice healthy bar. I cut the sugar to 1/2 a cup and that was more than enough. I also used half oil and half applesauce (1/4 cup each). I ran out of craisins so I subbed half raisins, but the craisins gave it a better tang. Thirty minutes was the perfect baking time; more would have dried it out.

Salmon with Dill

Rich Chocolate Cheesecake

This is rich, luscious cheesecake. My guests loved it. Be forewarned - it is not very sweet. If you don't like a bitter chocolate type of taste either cut the cocoa to 1/2 cup or up the sugar to 1 c. If you want the topping to be luxuriant, make 1.5 times the recipe.

Juicy Peach Crisp

Yum! This was excellent. Like others, I cut the white sugar to 1/2 cup (no more is needed), replaced half the flour with oats, cut the oil to 1/3 cup, and added a dash of nutmeg to the flour mixture. Straight out of the oven this is irresistible.

Thighs on Rice

A delicious, comforting meal. I used 2 T. olive oil instead of the butter. To get this really soft and fully-cooked I needed to bake it for almost an hour and a half; 45 minutes seems far too short. We weren't crazy over the flavor the Italian seasoning gave to the dish. Next time I'll use seasoned salt and paprika.

Cabbage Sloppy Joes

A solid, satisfying, and simple supper. To make this healthier, I used ground chicken instead of beef, replaced half the ketchup with tomato sauce, cut the sugar to 1 T. and used cider vinegar rather than white. I added the cabbage halfway through the cooking time to keep it crisp. My family really enjoyed this!

Egg Salad I

A nice, elegant egg salad (or as elegant as egg salad can be). I doubled the mayo and left out the onion because my family doesn't like raw onion. Sprinkle the paprika on top to avoid pink salad.

Peachy Tossed Salad

A refreshingly different salad that's pretty too. I left out the cucumber because it didn't seem to "match." I also used Bulgarian cheese instead of feta. And to cut the fat and make the dressing more creamy, I used 1/4 c. oil (more than enough) and 1 c. low fat sour cream.

Crispy Potato Wedges

Seriously yum!! My family loved these. I cut each potato into eight pieces, used seasoned salt instead of regular, and added paprika to the spice mixture. I served with broiled chicken and broccoli and they were a hit.

Black and White Cookies I

This cookies is a bit bland but it does have the exact texture of black and white cookie. I didn't use this frosting - I found a recipe that called for vanilla and a hint of lemon in the white frosting and cocoa in the chocolate frosting and it worked really well. But this cookie is a great base.

Banana Cream Pie with Chocolate Lining

This is good. I doubled the chocolate and cream (used non-dairy cream and it worked fine). I used Amaretto liquor because i didn't have Irish whiskey but it was a bit overpowering and I think I'd leave it out next time.

Garlic Roasted Chicken

This was flavorful and juicy. I didn't have a whole chicken, so I poured it over chicken pieces and that worked well. I used lemon juice instead of a lime wedge, and extra garlic. Even the kids really like this.

Chuck's Favorite Mac and Cheese

My kids loved this, but my husband found it a bit dry. I added 1/3 cup of milk, I think next time I'd up it to at 1/2 cup. I also cut down on the bread crumbs a bit. Simple and hearty.

Chocolate Icebox Cake

A delicious dessert. I used chocolate wafers for the crust since we don't have ladyfingers here - it was a bit dry but it worked. Do not mix water into the chocolate; it doesn't melt smoothly with water mixed in. The kids loved this.

Basic Fondue

I've always been curious to try fondue and this was my first shot. Following other reviewers I used half milk, half beer (all milk would have been bland) and cut the cheese to four cups. I used garlic powder instead of fresh garlic, and soy sauce instead of Worcestershire sauce. It was robust and delicious.

Rich Chocolate Truffle Pie

Incredibly rich and decadent. I used non-dairy whipping cream and made a crust from vanilla tea biscuits which was a nice foil to all that chocolate. I wish it had been a bit more fluffy. Next time I'll be sure to cool the chocolate mixture completely, mine was a bit warm and perhaps that was the problem. But this is definitely a winner!
