Butterscotch Oatmeal

YUM!! This was so good - rich and creamy and totally satisfying. However, you must cut the brown sugar and butter in half, otherwise it will be sickly sweet and greasy.

Fluffy Pancakes

Garlic and Onion Burgers

Nice, juicy and flavorful. Not spectacular, but very good. I used part ground beef, part ground chicken, and seasoned salt instead of regular.

Grilled Zucchini and Squash

This was quite good. I used 1 T. of olive oil instead of the frightful amount of butter called for and added a 4 oz. can of mushrooms. That really jazzed it up. The kids still wouldn't touch zucchini but hubby and I enjoyed it.

Apple Cake IV

Wow!!! This cake is amazing. Light, fluffy, flavorful - everything you'd want in a cake. I cut the sugar to 1 1/2 cups and replaced 1/2 the oil for applesauce. Cut the apples and don't skimp on the beating time. You'll get a winner.

Dee's Mexican Rice

This was a really good rice dish that even my non-rice eaters liked. I used chili powder instead of the red pepper, and used about 12 oz. of crushed tomatoes instead of the fresh tomatoes and ketchup.

Chocolate Chocolate Chip Cookies I

These cookies were really good! The family loved them. I made them as bars, so I was able to use oil instead of butter. I also substituted 1/2 c. of the white sugar with brown, and used half white chocolate chips and half regular. Be careful not to overbake, these need to be soft.

Mushroom Slow Cooker Roast Beef

This was disappointing. It sounded great, but came our really bland, despite the onion and two garlic cloves that I added. When I heated up leftovers I added 1/2 c. of red wine and more soup mix, and that helped,but I won't be making this again.

Honey Glazed Carrots

I found these mediocre. I used frozen baby carrots and boiled them for ten minutes before baking. I left out the MSG (why on earth would anyone add that to their food when we should be avoiding it like the plague?!) and cut the 3 T. butter to 1 T. olive oil.

Orzo with Mushrooms and Walnuts

This orzo is excellent - easy yet elegant. It can be a tad bland though, so I was heavy-handed with the salt, and also added garlic powder and parsley. I over-toasted the walnuts by mistake (about 15 minutes) and they were actually wonderfully crunchy.

Almond Sole Fillets

I found this rather bland and boring. Like others, I toasted the almonds in the oven with oil spray and then baked it at 350 for half an hour.

Honey Cake III

This gets five stars for flavor. However, for some reason, my cake didn't rise properly and came out as gooey bars - it's happened to me before so it's probably my oven and not the recipe, but I can't rate the texture. I was out of orange juice so I used tropical nectar, it was a great twist.

Spicy Mango Sweet Potato Chicken

This was an intriguing and delicious dish. I used whole chicken pieces, so I cooked it for a lot longer both alone and once mixed with the other ingredients (if I'd do that again, I'd cook the sweet potato for half the time so it doesn't get mushy). I also added about 2 c. of chopped pumpkin along with the sweet potato, and used a sweet chili sauce instead of hot sauce. Since I used extra veggies, this was great all on it's own.

Mom's Best Meatloaf

This was good, but not spectacular. I read a lot of reviews. Some complained that it was too runny, so instead of tomato juice I used tomato paste mixed with a bit of water. Others said it was bland so I added 1 tsp. each of black pepper and garlic powder. Lastly, I made 1.5 time the glaze. Those changes all helped, but the final product was still tasty but not incredible.

Creamy Rice Pudding

Excellent - creamy, sweet comfort food. I mixed the egg and milk in a separate bowl, then added a few spoons of the rice mixture and mixed it in, before adding it all to the pot. This prevents your egg from scrambling. I also added a dash each of cinnamon and nutmeg to give it additional flavor.

Chewy Chocolate Chip Oatmeal Cookies

My family went nuts over these, but I found them a bit dry. Next time I'll use only 2.5 cups of oats. I also followed other reviewers' advice and used 1.5 c. of flour, 1 tsp. baking soda and cut the salt to 1/2 tsp.

Quinoa with Asian Flavors

I made this recipe with bulgur (I find the two grains almost interchangeable) and my family loved it. I sauted an onion and two cloves of garlic before toasting the bulgur and then omitted the garlic powder. Simple and delicious.

Sweet Grilled Peaches

Grilled peaches sounded strange, but we loved these. We used fresh peaches, placed them flesh down on the grill. We left them there for 6 minutes, then turned over, drizzled with the honey and cinnamon, and grilled an additional 5 minutes. They were great.

Iced Coffee Slush

WOW - this deserves ten stars. Here in Israel, all the cafes sell this amazing iced coffee that has a Slurpee consistency. For years I've been trying to replicate it at home, but with no success. With this recipe, I can do it. Make the coffee according to the directions, but cut the sugar to 1 c. Freeze. Half an hour before you need it, take it out of the freezer. Once it's softened just a tad, use a spoon or knife to break half of the mixture into chunks. Put them into a blender. Add 1 cup of milk and 2 heaping tablespoons chocolate milk powder (or sugar if you're a coffee purist). For an adult only crowd, you can use a good swig of chocolate and/or coffee liquor. Blend until no chunks remain. You will get the smoothest, frostiest, most incredible iced coffee that you can eat with a spoon. My entire family went nuts over this one!!! Thanks Iola - I'll be making this all summer.

These were interesting, but the texture was far too eggy for me. If you do make them, add 1 tsp. vanilla, a dash of cinnamon and 1-2 tsp. sugar.
