Lemony Cucumbers

A classic cucumber salad. I found the vinegar overwhelming - next time I'd use less. Purple onion add color.

Barbequed Pineapple

Yum! I left out the sugar and added a bit of pineapple juice to the marinade. These were fabulous in buns with hot dogs and by themselves.

Watermelon Cooler Slushy

A refreshing way to get rid of unwanted watermelon. I used lemon juice instead of lime cutting it to 3 T. and omitted the salt. You need to adjust the sugar depending on the sweetness of the melon. Some of the kids wouldn't touch it - others loved it.

Chunky Monkey Pancakes

YUM! This was a huge hit. I used half whole wheat flour, mashed the banana (I don't think chunks would have worked very well) and used oil instead of butter. Served with cottage cheese - no syrup needed. The kids could not stop eating them.

Cinnamon-Peach Cottage Cheese Pancakes

This didn't go over so well here. We felt it wasn't sweet enough, and the little bits of nectarine (I didn't have a peach) didn't blend well with the other ingredients. If you do make this, you may want to use half whole wheat flout.

LJ's Easy Penne with Vodka Sauce

My husband and I enjoyed this rich sauce, but the kids found it too heavy. They preferred Penne with Pink Vodka Sauce from this site. If you make this, add 1 tsp. each of basil, oregano, and sugar.

Hamburger Steak with Onions and Gravy

Fabulous comfort food. Like other, I doubled the sauce, used onion soup instead of beef broth, and wine instead of sherry. The extra gravy was the perfect accompaniment to mashed potatoes.Served along with broccoli, this made for a picture-prefect, and palate-perfect meal.

Perfect Cheesecake Everytime

This was disappointing, but perhaps that's because I used Israeli cream cheese which is more liquidy than American. Whatever the case, the crust was good, but the texture wasn't nearly as smooth as I had hoped. I also found that I needed to bake it longer.

Grilled Salmon Fillets with a Lemon, Tarragon, and Garlic Sauce

Delicate and delicious. Cut the olive oil to 1/2 T. for both the fish and the sauce. I didn't have tarragon so I used dill instead and it was excellent. I baked the salmon with the oil and spices at 375 degrees for around twenty minutes, then poured half the sauce over it and baked for an additional ten minutes. I served it with the leftover sauce. Wow - what a treat.

Potato Salad I

Chunky Rhubarb Applesauce

The perfect blend of tart and sweet. I used frozen rhubarb which worked great. Two things to watch out for: Firstly, since there's no water added, this must be stirred regularly or it will burn. Second, go easy on the spices or the flavor will overwhelm the applesauce.

Dill Pickle Meatloaf

Pickles make a fabulous addition to meatloaf; this was exceptionally moist. Hubby and I really enjoyed this and even the kids finished their portions. Like others, I left out the salt, used breadcrumbs instead of shredded bread, and doubled the topping.

Chocolate Pecan Pie I

I've made many a pecan pie, and this was one of the best. The recipe is similar to all the others but something (maybe the coffee?) made it a cut above. Don't bother with the cream; that's really gilding the lily. Thanks Jeannette.

Carol's Arroz Con Pollo

A nice, filling, one pot supper. Nothing spectacular. I used turkey instead of chicken, turmeric instead of saffron, and yellow pepper instead of green. I also added a teaspoon of cilantro. Use just 1 T. of olive oil instead of 3 T. of vegetable, and keep the chicken in the pot as you add the other ingredients. Beware - this burns quickly so keep a close eye on it.

Tuna Macaroni Salad

Nice salad. Due to my family's preferences, I used pickles instead of celery and onion powder instead of chopped onion. I let it sit overnight, and it became rather dry so I added pickle juice to moisten it. I think next time I'll add tomatoes as well; something was missing.

Apricot Chicken I

I made my own Russian dressing with ketchup, mayo and a spritz of lemon juice. Used this topping on whole pieces of chicken. It was good, but I found that it overly drowned the chicken flavor. I'm looking for something a bit more subtle.

Romanian Apple Cake

This was pretty good, but nothing memorable. I cut the sugar to 1 c. ( no more is needed) and replaced half the oil with applesauce. I don't think I'll make this again - there are too many great recipes out there to make something mediocre.

Mushroom Sauce

This is a elegant, flavorful sauce. I used olive oil instead of butter, chicken broth instead of beef, and cornstarch instead of arrowroot powder. It didn't thicken quite as much as I'd hoped, but it was fabulous over liver crepes.
