Marinated Cherry Tomato Salad

Reviewed: Nov. 15, 2010
A nice flavorful salad. I used regular tomatoes. Use olive oil rather than vegetable - it adds great flavor.

Chicken Marsala

Reviewed: Nov. 6, 2010
Excellent. I add basil to the flour mixture and 1/2 c. chicken broth to the sauce. Since it's hard to find kosher Marsala wine, I mimic it with a combination of 2 parts wine, 2 parts brandy, and 1 part amaretto liqueur. The result is beautiful and delicious.

Slow Cooker Lentils and Sausage

Reviewed: Nov. 1, 2010
This is a nice, hearty stew. I used four carrots and only one pound sausage. It's important to add spices (I added cajun and a dash of red pepper) as well as one onion and two cloves garlic. We happened to have some cooked noodles which I threw in and they were great - next time I'd add them to the slow cooker 15 minutes before serving.

Amusement Park Cornbread

Reviewed: Sep. 5, 2010
Yummy! We have cornbread nearly every week (we like it with tuna fish for lunch) and we've tried a number of recipes. This one is excellent - light inside, crispy outside. I cut the sugar to 1/2 c., used only 1 1/2 c. flour but 1 1/4 c. cornflour, and used oil instead of butter.

Outrageous Chocolate Chip Cookies

Reviewed: Aug. 16, 2010
I was excited to find a recipe that had all my favorite cookie ingredients - chocolate chips, oats and peanut butter. However, while the cookies were certainly good, they seemed to have an identity crisis. The flavors warred rather than blended.

Lemony Cucumbers

Reviewed: Aug. 14, 2010
A classic cucumber salad. I found the vinegar overwhelming - next time I'd use less. Purple onion add color.

Barbequed Pineapple

Reviewed: Jul. 25, 2010
Yum! I left out the sugar and added a bit of pineapple juice to the marinade. These were fabulous in buns with hot dogs and by themselves.

Watermelon Cooler Slushy

Reviewed: Jul. 16, 2010
A refreshing way to get rid of unwanted watermelon. I used lemon juice instead of lime cutting it to 3 T. and omitted the salt. You need to adjust the sugar depending on the sweetness of the melon. Some of the kids wouldn't touch it - others loved it.

Chunky Monkey Pancakes

Reviewed: Jul. 10, 2010
YUM! This was a huge hit. I used half whole wheat flour, mashed the banana (I don't think chunks would have worked very well) and used oil instead of butter. Served with cottage cheese - no syrup needed. The kids could not stop eating them.

Melanie's Chili

Reviewed: Jun. 30, 2010
This is a nice, basic chili. I used a tad more crushed tomatoes, and doubled the garlic. It went very well wish mashed potatoes.

Cinnamon-Peach Cottage Cheese Pancakes

Reviewed: Jun. 22, 2010
This didn't go over so well here. We felt it wasn't sweet enough, and the little bits of nectarine (I didn't have a peach) didn't blend well with the other ingredients. If you do make this, you may want to use half whole wheat flout.

Moist and flavorful, but I found this a bit too ketchupy.

LJ's Easy Penne with Vodka Sauce

Reviewed: Jun. 18, 2010
My husband and I enjoyed this rich sauce, but the kids found it too heavy. They preferred Penne with Pink Vodka Sauce from this site. If you make this, add 1 tsp. each of basil, oregano, and sugar.

Hamburger Steak with Onions and Gravy

Reviewed: Jun. 18, 2010
Fabulous comfort food. Like other, I doubled the sauce, used onion soup instead of beef broth, and wine instead of sherry. The extra gravy was the perfect accompaniment to mashed potatoes.Served along with broccoli, this made for a picture-prefect, and palate-perfect meal.

Perfect Cheesecake Everytime

Reviewed: Jun. 15, 2010
This was disappointing, but perhaps that's because I used Israeli cream cheese which is more liquidy than American. Whatever the case, the crust was good, but the texture wasn't nearly as smooth as I had hoped. I also found that I needed to bake it longer.

Grilled Salmon Fillets with a Lemon, Tarragon, and Garlic Sauce

Reviewed: Jun. 12, 2010
Delicate and delicious. Cut the olive oil to 1/2 T. for both the fish and the sauce. I didn't have tarragon so I used dill instead and it was excellent. I baked the salmon with the oil and spices at 375 degrees for around twenty minutes, then poured half the sauce over it and baked for an additional ten minutes. I served it with the leftover sauce. Wow - what a treat.

Potato Salad I

A nice, basic potato salad. I used red pepper instead of green and found that i needed to add some pickle juice before I served it in order to moisten it.

Chunky Rhubarb Applesauce

Reviewed: Jun. 5, 2010
The perfect blend of tart and sweet. I used frozen rhubarb which worked great. Two things to watch out for: Firstly, since there's no water added, this must be stirred regularly or it will burn. Second, go easy on the spices or the flavor will overwhelm the applesauce.

Dill Pickle Meatloaf

Reviewed: May 31, 2010
Pickles make a fabulous addition to meatloaf; this was exceptionally moist. Hubby and I really enjoyed this and even the kids finished their portions. Like others, I left out the salt, used breadcrumbs instead of shredded bread, and doubled the topping.

Chocolate Pecan Pie I

Reviewed: May 29, 2010
I've made many a pecan pie, and this was one of the best. The recipe is similar to all the others but something (maybe the coffee?) made it a cut above. Don't bother with the cream; that's really gilding the lily. Thanks Jeannette.
