Country Barbecued Chicken

This sauce looked great, but I didn't want to grill. I combined the sauce ingredients (omitting the butter) in a frying pan and brought them to a boil, the added 1/2 cup water to make a thinner sauce. I cut the chicken breasts into chunks and added them to the sauce. I cooked about 10 minutes, until chicken was done. I served it over rice and my family loved it!

Bar-B-Que Sauce

Excellent! We marinated wings in this sauce for several hours and then grilled them. They got rave reviews! I used 1 tsp. prepared mustard instead of mustard powder, minced garlic instead of powder, and omitted the hot pepper sauce.

Evin's Indian Apricot Chicken

This was my first foray into Indian food and it was delicious.I subbed the white vinegar with cider vinegar, the lime zest with lemon zest, and the hot pepper sauce with red pepper. I served it over rice with broccoli on the side and and the whole family enjoyed it.

David's Yellow Cake

Fabulous, moist cake! I used oil instead of butter, orange juice instead of milk, and 2 whole eggs and 4 egg yolks instead of 8 yolks. My only difficulty with the cake was the it produced a thick crumb and sometimes the crumbs got mixed in with the frosting. But it still made an birthday cake.

Buttercream Icing

A nice, basic buttercream frosting, spreads nicely. I needed to make mine milk-free, so I used 1 c. margarine instead of the shortening and butter, and it worked well. Beware - some vanilla extracts will give the frosting a light brown tint. If you're coloring the frosting anyway it doesn't matter, but if you want it to be pure white, you're better off using vanilla sugar.

Grilled Pineapple with Mascarpone Cream

For those of you who are looking for a dairy-free version, simple marinate the pineapple (I used canned) in the honey and lemon juice for half an hour and then grill. Yum!

Slow Cooker BBQ Chicken

This was fabulous! Like others, I cut the maple syrup to 1/4 c. and added a 1/4 c. bbq sauce and a splash of liquid smoke. I was going to be out all day so I left it on low for around ten hours. I served it over rice and the kids loved it!

Tender Beef Brisket

I used this marinade for a brisket that had been cut into steaks. I had no time to marinate it, so i just poured the sauce on top and baked it at 400 for fifteen minutes on the first side, ten on the second. The meat came out deliciously flavorful and moist.

Dutch Apple Pie with Oatmeal Streusel

A delicious and flavorful pie. I baked the crust on 350 for ten minutes to keep it from getting soggy. The streusel topping helps it stand out from your average apple pie.

Pennsylvania Coal Region Barbecue

This gets five stars not only for ease but also for taste. The mustard is the secret - my family doesn't like mustard, but never realized it was in there and loved the kick it added. To make this healthier I used ground chicken instead of beef and subbed half the ketchup with tomato paste.

Fabulous Fried Cabbage

I had some cabbage that I needed to use up and decided to try this. Wow! What a hit. The kids all had seconds and would have thirds if I had had more. I used canola oil and sauteed an onion first before adding the broth and cabbage. Thanks for a winner.

Crispy and Creamy Doughnuts

These doughnuts are fabulous!! Light and creamy and so delicious. The only reason I'm not giving it five stars is because it's impossible to work with this dough. Until I tasted them I kept saying I'd never make them again. The dough was really soupy and we needed to add an outrageous amount of flour. Now I know that I'll definitely make these again, but next time I'll cut the milk to 1 cup so the liquid/flour ratio is more balanced.

Maria's Pepper Steak

Easy and delicious. My husband loved this. Thanks to other reviewers for their great suggestions: 1. After you remove the veggies from the pan, brown the meat. Remove from pan, then cook sauce, then add veggies and meat. 2. Add 1/2 tsp. ginger and a dash of red pepper to sauce. 3. Make a slurry of 1 T. corn starch and 3 T. water and add to sauce. With all those changes, this is a really nice supper. For a pretty presentation use red and yellow peppers.

Chocolate Peanut Butter Pie I

This is very rich. My guests really liked it, I found the strong margarine taste a bit off-putting. I used no margarine in the peanut butter layer and it was great. Next time, I'll try cutting the margarine to 1/2 cup in the choc. layer. I layered this pie - choc., p.b., choc and it came out very pretty.

Hamburger Soup

This is filling and warming, and the kids all liked it. Personally, I found it a bit bland. It's also quite oily, and that's after cutting the fat (I used oil instead of margarine). To make it healthier use ground chicken rather than beef, and throw in a few potatoes to have a meal-in-one.

Almond Lemon Chicken

Full-bodied and flavorful. I love lemon but I found this a little overpowering; next time I'd cut the lemon a bit. To make this healthier, cut the oil to 2 T. - one in the marinade, and one for the searing, and cut the butter entirely. You can cut the almonds in half by toasting them - the increased flavor from the roasting will make up for the missing quantity.
