Make Ahead French Toast
I have made this on several occasions, mainly for holidays and it always comes out nice. Even my picky boys will drop everything to eat it. Tonight, I am incorporating some of the leftover pumpkin pie filling that I always seem to be left with. It will add so much flavor to the egg/milk mixture. Just an idea for those of you preparing pumpkin pies the day before.

Quinoa and Black Beans
I made this as directed and added a chopped fresh tomato to enhance the flavor. I also used only a half a can of black beans, and added Tyson fajita seasoned grilled chicken (frozen section) to make it a full meal. Also made some cheese quesadillas with whole wheat tortillas. It made for a hearty, enjoyable meal with plenty of leftovers for tomorrow:)

World's Best Potato Salad
This a an outstanding recipe. Of course, you can add other ingredients to your liking, but recipe stands on its own as is. I am not fond of "relishy" tasting potato salad, and potato salad without relish can taste rather plain, so this is a recipe that has both flavor and isn't overdone. I have made it serveral times for my family and knew I hit a home run when I found my teenage daughter and her best friend sitting on the tile floor of the kitchen one morning, eating the rest of it out of the bowl:) Definitely worth the extra steps to get it right!
