Easy Chicken Enchiladas
I really like this one. It's pretty dang easy. I, too, use red enchilada sauce and pour it over the top. To make it even easier, you can use canned chicken (it sounds gross, but there are a couple good brands out there), and I really like using uncooked tortillas (they cook in the 30 mins in the oven. The last 5 minutes I take the tin foil off and brown a cheese a bit. Other than that, I leave everything the way it is.

Garlic-Herb Red Snapper
Excellent recipe! Maybe go a little easy on the salt, and the pepper adds a bit of a punch so use to taste. I added about 2 or 3 Tbsp of butter and melted it all down, then basted it on the fish. I then wrapped them in foil and baked them in the oven for about 16 minutes at about 435. For just one fillet (about 6 oz), cook for 11 minutes. If not wrapped in foil, subtract 5 minutes. If you don't have chevril, use 1/2 tsp dried parsley flakes and 1/8 tsp sage.
