Curried Mustard Greens with Kidney Beans

I loved loved loved this recipe~ I added more red pepper, used condensed fat free milk rather than half and half. I added half a ring of turkey smoked sausage~ Served over brown rice- Absolutely INCREDIBLE!

Quick Cassoulet

My husband and I were a little surprised at the combination of ingrediants-things we wouldnt normally mix together. But YUMMY! I served over rice, he ate it every meal until it was gone!

I gave 4 stars cause I think it would have turned out better had I followed the recipe correctly. DO NOT, under ANY circumstances use instant pudding for this crust!

Three Cheese Baked Mashed Potatoes

Excellent way to spice up instant mashed pototoes. I used what I had on hand which called for a little improvising. Used cheddar and colby-jack cheeses. Added a little extra onion for texture, a lot less bacon bits (cause I didnt have very many)And for the topping I didnt have bread crumbs so I used crushed baked potato chips with the parmesean and powder and butter. Lays I think they were, but YUMMY was that good! Spray the top with olive oil or whatever spray oil you like and it turns out beautifully! Also a yummy way to make the texture and flavor more interesting would be to dice up some green and other colored peppers and mix them in too. I'll try that the next time I make them when I don't have picky munchkin's to feed! Thanks for the ideas Melissa!

Blueberry Coffee Cake I

Excellent recipe! I did follow the advice of other users and added more blueberries (1 1/2C) More milk (3/4C)and adding the yummy cinnamon mixture to the middle too. I Put the crumblys on top and when I flipped the cake over to cool it. It worked beautifully. My boyfriend ate almost the whole thing in 2 days!!!!

Creamy Swiss Chicken

What a wonderful base recipe! I did have to make a couple adjustments due to not having all the ingrediants, but it still turned out wonderful! I didn't have any cream soup, so I used an alfredo made with parmesan and mozz. I doubled the spice and added a little CURRY, strange I know but it added a little something that made this recipe memorable. My boyfriend brought the leftovers to work and happily devored them long before dinnnertime. Thanks for a great recipe!

Chicken Enchiladas II

Excellent recipe!! My folks loved it even my picky dad. my toddler ate some of the chicken which is better than nothing. I followed advice too and used low fat cream of chicken soup. but I also used non fat sour cream, nonfat sharp cheese n the middle and low fat shredded cheddar on the top. skim milk and low fat margarine too and you really cut the fat without losing taste! I added diced tomatoes with green chilies too. VERY yummy!!!

Scalloped Tomatoes

I thought it was yummy and different sidedish. It was very tasty eaten with breaded chicken breasts. My Father is a big fan now. But my toddler daughter wouldnt touch it.
