Pineapple Angel Food Cake I

Can't get any easier than TWO ingredients! Fat-free, too! I made this cake in a tube pan (lightly greased), cooled it upside down, and it still stuck to the pan. It wasn't the most attractive presentation, but I will make it again...in a 13x9!

I thought this recipe was just "okay". This recipe makes a lot, so I would suggest freezing a portion of the batter for later use.

Hard Chocolate Glaze

This is the perfect glaze for cookies, brownies, cakes, biscotti...whatever! I reduced the recipe, let it cool slightly and then used it on a Ho-ho cake for the kids. It set up perfectly with a nice glossy look. I will use again and again.

Chicken Pot Pie III

You can't go wrong with this recipe. I substituted cream of chicken for the cream of potato, which I couldn't find in my grocery store. As was suggested, I brushed the top crust with a little milk before baking and covered the edges with foil to prevent burning. A beautiful presentation, but I was not able to save any leftovers. It lost its appeal when all the filling oozed out into the pie plate. Darn! :)

Jo's Rosemary Bread

I think it's best to eat this bread right out of the oven. I ate some leftovers the next day, and the rosemary was way too strong. Will definitely make again and again, but I may cut back on the herb next time.

Easiest Teriyaki Marinade Ever

I had my grill fired up on a 25-degree evening, and you could smell this BBQ all over the neighborhood! Mmmm-mmm! Sweet and tasty! I can't wait to try this during the summer.

Slow Cooker Beef Stroganoff I

This really is the best beef stroganoff recipe, but keep in mind that there are 890 mg's of sodium per can of soup. The worchestershire sauce, boullion, onion soup mix and additional salt may not be necessary, especially for those watching their blood pressure. Loved it, though, of course!

Slow Cooker Cranberry Pork

This recipe was just so-so for me. I followed it as directed, except that I used whole cranberry sauce. Slow cookers never really make a good presentation (overcooked, perhaps?), but I appreciate the convenience factor they provide. Maybe next time I'll double the sauce ingredients for more flavor.

Chicken Tortilla Soup V

Don't let the pictures fool you. This is a fantastic soup. I intended to make it for one of my Once-a-Month-Cooking entre's, but we ate so much of it that there was nothing left to freeze! I took the other reviewers' advice and doubled the chicken & broth, added 1 can of black beans, the juice of a 1/2 lime and 1/4 jalapeno. Then I reduced it to make it more of a meal. Fabulous and filling! I'll try the taco seasoning tip next time.

Jean's Homemade Chicken Noodle Soup

This is the best chicken soup EVER! You must use fresh ginger and let it simmer in the pot with the other veggies. I added a 4" sprig of rosemary and some sliced fresh mushrooms. Instead of noodles, I used wild rice. Thank you for sharing, Jean. My family loves this recipe.

Pork and Black Bean Stew

Very good recipe! I used 1/2 lb. seasoned bulk chorizo sausage and doubled everything else. I thought it needed some other type of vegetable in it, but it's great as is. The color looked a little strange at first, but it blended and reduced down nicely. Definitely will make again and serve with guacamole salad or something. Yummy!

Peach Cobbler

I followed this recipe exactly, but it just didn't turn out as expected. Maybe I should have cooked it longer or added less milk. The dough bakes into a some-what bland "cake" with all the peaches and juice at the bottom. (I prefer a less-sweet, pie crust texture.) I would suggest thickening the juice with cornstarch before adding to the pan or use a canned pie filling. I pitched this one, because nobody would eat it. I will try again another day with my alterations.

Groovy Green Smoothie

This was pretty good. I used 1 cup cinnamon apple sauce in place of the apple, threw in some carrot and topped it with pineapple juice for sweetness. The color was funky, but it tasted yummy!

Light and Fluffy Spinach Quiche

We had a four-generation Mother's Day brunch, and everyone raved about this quiche. I used an extra egg, only 3/4 of the spinach and some green onions. I also used a deep dish pie plate. It was deeeee-lish!

White Frosting

I don't understand why people didn't like this recipe. Were they expecting decorator's icing? As long as you whisk the flour and milk beforehand, then beat it for 10-12 minutes, it comes out great. Maybe they didn't let it cool enough? Anyway, we devoured it. I subbed coconut extract for the vanilla and coated the cake with sweetened coconut. Heavenly. Thanks, Sierra, for a simple, fluffy frosting that's out of this world!

Honey-Ginger Grilled Salmon

Delicious! I recommend marinating overnight, though. I was also hoping the glaze would be a little thicker, like I've had in the restaurant. Perhaps next time I'll brush on more honey in the end. This is a keeper!

Chocolate Chip Banana Muffins

These muffins are bakery-quality! I changed the original recipe by reducing the oil to 1/4 cup; I didn't have yogurt, but substituted with 3/4 cup sour cream. I used 2 bananas and added chopped walnuts. The texture was like a cupcake. They taste great right out of the oven--no butter needed!

This is an excellent recipe to make with kids. I halved it and used leftover apricot filling from the kolacky cookies I made at Christmas. Sprinkling them with sugar should be optional, I think, as the confectioner's glaze is sufficient.
