Chicken Enchilada Casserole I

Delicious. Had to alter with ingredients on hand, which is why four stars and not five. Used the meat from store bought rotiserrie chicken, no green chiles on hand, so added some medium salsa for the heat. No processed cheese so used an 8 oz bag of shredded cheddar, not melted in the mixture, but layered on top of chicken mixture like you would do in a lasagna. Flour tortillas instead of corn, and added a can of drained and rinsed black beans. Left out the chicken broth because I thought it would make the chicken mixture too soupy. No chili powder, so added some cumin. Well recieved by adults and kids.

Best Guacamole

I used this as a base recipe. I added 1 grated jalapeno pepper to add some heat, 1 seeded chopped roma tomato for texture, and a sprinkle of cumin and garlic powder for flavor. Let it sit an hour as suggested. Delicious.

Mom's Prize Winning Raw Apple Cake

This was delicious. Nice and moist. It got great reviews from family and coworkers. 4 stars because of a couple changes. I added more than 2 cups of apples (between 2 and a half and 3) becuase I had them and wanted to use them up. I forgot the salt altogether (was not missed) and I used 1 cup of plain lowfat greek yogurt in place of the sour milk because I had it and like to bake with it. I will make this again.

Sicilian Ricotta Cheesecake

I made this on Easter Sunday. I knew not to expect "Cheesecake." I really liked it. Not too sweet. Not too heavy. I sprinkled powdered sugar over the top and then a little extra when plated. Do not change a thing. Imagine cheesecake meets custard. Delicious.

Slow Cooker German-Style Pork Roast with Sauerkraut and Potatoes

This was delicious. Even my husband who turns his nose up at the often dry crock pot roasts raved about this one. I used a 24 oz jar of sauerkraut because that is what I had. I did not measure the caraway seeds, just sprinkled them over the top of the kraut. Moist and tastey.

Country Apple Dumplings

There aren't enough stars for this one. I decided I just had to have this for my birthday. Made half a batch as there were only four of us. Used half brown sugar and half white. Topped with whipped cream. O=O=O so good.

Beef and Irish Stout Stew

This was really, really good. Of course, I did my own thing with the basic concept. I had 1 lb of stew beef, coated it with flour and browned it in bacon grease after cooking 4 slices of bacon to add to stew. Browned the onions as directed. After reading many reviews and other recipes using stout, I reduced the renderings using the stout (full can of Murphy's) beef broth, tomato paste and some apricot jam, because many recipes I read added prunes, but I didn't have any.... (sorry, i did not measure any of these, just eyeballed.) I put the meat, onions, broth mixture, carrots, some chopped celery, white potatoes and sweet potatoes in a crock pot. I did not have fresh time so I added fresh rosemary. I added some garlic powder, salt and pepper to taste. Let it cook on low all day when I was at work, at least 9 hours. When I got home, I cooked some noodles and added them to the crock pot to soak up the extra broth. wow. very tastey.

Maple Walnut Pumpkin Pie

Made for Thanksgiving with a homemade graham cracker crust. Left out the walnuts, didn't have any, and the topping held up fine without them. I used 2 cups pureed sugar pumpkin as I had some frozen from my garden. I had a little too much filling so I filled a pyrex custard cup with what was left, and baked it along side the pie. These would be nice for individual servings if you don't want to make a pie. Sweeter than your average pumpkin pie, so you might want to serve it with some creme fraiche rather than a sweetened whipped cream.

French Spring Soup

Great soup on this beautiful Spring day. After reading other reviews, I too, used chicken broth (3 cans plus about 1 cup of concentrated stock I made myself) along with 2 cups of water. I added 2 teaspoons of jarred minced garlic to the leek and onion sautee. Followed the rest of the recipe as written until the end where I used half and half rather than heavy cream and added a few sprigs of fresh rosemary and a fresh bayleaf. I also added some leftover cooked chicken. Can't say this was lacking flavor at all. Will make this again.

Ham and Asparagus Strata

Made this for dinner last night as I was looking for something that had ham, aspapragus and eggs. Luckily, I also had a bag of stuffing in my cupboard. Had to use shredded cheddar cheese and cream of celery soup in place of the swiss and cream of asparagus. I added some onion powder and I also added a packet of bernaise sauce mix due to some of the reviews saying it was little bland. Family liked it. Texture a little like bread pudding. May make again with other combination of ingredients.

Delicious~makes so much soup that I thought I was gonna need a bigger pot. Was a bit timid with the garlic so I used about half of what the recipe called for. Next time I will use the entire amount. Will definitely make again.

Frog Cupcakes

So fun for a birthday party. We wanted green cupcakes so we started with the white cake mix, added a box of pistachio flavored instant pudding and then drops of green food coloring until it was nice and green. Store bought green frosting (a christmas issue) was used as well as the green sugar sprinkles. after cutting the marshmallow in half we stuck the sticky side in the green sprinkles (don't frogs have green eyes?) and frosted the outer portion of the marshmallow. The chocolate chips were stuck on with a dip into the frosting. Different shaped red mouths finished them off. Not a quick recipe, but worth the effort. Have fun with these!

Tuna Noodle Supreme

The family really liked this recipe. I made it as written but had to leave out the red pepper and green onion. Didn't have them. I used bow tie pasta and to make up for the missing green onions, I sprinkled in a little onion powder. Next time, I will also pre-cook the broccoli a bit so it's not so crunchy.

Chocolate Chip Banana Muffins

I will give this recipe 5 stars even though I had to change it up a bit to match the ingredients I had on hand. I used a 6 oz. container of lemon yogurt and replaced the semi-sweet chocolate chips with white chocolate chips and also added about a 1/2 cup of craisins. I used 3 ripe bananas, just a little over the cup called for. They were delicious. I will bake them as written next time I have the called for ingredients. Nice to know it is adaptable to change. 11/5/11: Made again and had to replace yogurt with buttermilk. Mini semi sweet chocolate chips were a big hit. Again, great recipe.
