About this Cook
I love cooking for my family. Now that we have chickens and bring in about 10 eggs daily, I try to make the most of them. I am becoming the Quiche Queen, trying all kinds of combos of cheeses, vegetables, and meats. I'm also a bargain shopper and search the discount sections of the markets. Cheese and meat ends from the deli (usually $1.99/lb) keep my macaroni and cheese having a different twist every time I make it. I learned to love cooking from my mom and grandma and am happy to see my married daughter following some of my cooking habits.
My favorite things to cook
I like trying to replicate things we've had in restaurants, comfort foods like casseroles, stews and soups. Guess I really don't have a favorite.
My favorite family cooking traditions
Guess that would be using mom's stuffing recipe on Thanksgiving and making her spritz cookies every Christmas. We also make the Easter bunny cake which I think I first made in 5th grade.
My cooking triumphs
Thanksgiving Dinner for 24 with all the fixings.
My cooking tragedies
A high School friend and I made brownies and to speed up the cooling process we stuck the hot pyrex dish in the snow. BIG MISTAKE.

Chicken Enchilada Casserole I
Delicious. Had to alter with ingredients on hand, which is why four stars and not five. Used the meat from store bought rotiserrie chicken, no green chiles on hand, so added some medium salsa for the heat. No processed cheese so used an 8 oz bag of shredded cheddar, not melted in the mixture, but layered on top of chicken mixture like you would do in a lasagna. Flour tortillas instead of corn, and added a can of drained and rinsed black beans. Left out the chicken broth because I thought it would make the chicken mixture too soupy. No chili powder, so added some cumin. Well recieved by adults and kids.

Best Guacamole
I used this as a base recipe. I added 1 grated jalapeno pepper to add some heat, 1 seeded chopped roma tomato for texture, and a sprinkle of cumin and garlic powder for flavor. Let it sit an hour as suggested. Delicious.

Mom's Prize Winning Raw Apple Cake
This was delicious. Nice and moist. It got great reviews from family and coworkers. 4 stars because of a couple changes. I added more than 2 cups of apples (between 2 and a half and 3) becuase I had them and wanted to use them up. I forgot the salt altogether (was not missed) and I used 1 cup of plain lowfat greek yogurt in place of the sour milk because I had it and like to bake with it. I will make this again.
