Butternut Squash Soup

Followed the recommendation to cut the cream cheese in half; otherwise made no alterations. The soup is really good but I think 4oz is still too much cream cheese. I'll make it again but try adding carrots and cinnamon.

Quinoa with Sweet Potato and Mushrooms

Awesome! I followed the recipe to a T and it turned out fantastic. The sweet potatoes and pecans give this dish plenty of flavor. I did have to add water to keep the vegetables from burning.

Brown Rice and Black Bean Salad

This recipe is fantastic! Little salt and pepper needed to season. My one change was using frozen peas/corn instead of canned, all else the same and it turned out great. I only made 1/2 the recipe and it still made a large portion.

Quinoa and Black Beans

I liked this recipe but it had a funny taste; I used vegetable broth but had to add some water and tomato paste to calm down the pungent taste. Overall, it tastes good and refrigerates well. Also, 2 cans black beans would have been too much so I stuck to 1.

Mediterranean Quinoa

I used 2 cups vegetable broth (instead of 4) which was perfect. It refrigerated well and tasted good cold too. Next time I make this I'll play around with the broth mixture and spices as it was missing something...

Classic Lasagna

This was such a hit! I ended up making half of the recipe vegetarian and baking the two pieces in separate, smaller dishes. I used about half of the sauce the recipe called for (I bought actual sauce instead of just tomato sauce) and used fresh herbs. All else according to the directions and it was the best ever!

I agree this was missing something but I can't put my finger on it either. It was a little thin for me but that could be because I didn't add the masa harina because I don't like grittiness.

It came out good, but not as I'd hoped. I used half red onions and half sweet onions because I wasn't sure what to use. Seems like it's missing something, but it also could be because this was my first attempt to make this soup.

Beer Lime Grilled Chicken

This was the most tender and juicy piece of chicken I've ever made! I followed the recipe exactly but marinated for about an hour. It was hard to tell how long to cook the chicken as the grill marks didn't take to it. Wonderful recipe!

Chicken Tortilla Soup V

Absolutely love this recipe! I try slight tweaks each time and found adding green chilies and a can of enchilada sauce to be good alternatives. I cut the chix broth depending on my mood for consistency.

Ginger Snap Cookies

Definitely a different twist to the traditional ginger snap! My boyfriend thought they were too gingery but everyone else loved them. I left out the fresh ginger as I couldn't find any.

Christmas Eve Beef Stew

3 onions were way too much. Also turned out a little watery despite I added a brown gravy packet. I also doubled the spices and used 1/2 cup red wine. The stew was delicious, but will definitely use 1 onion last time and maybe some barley to thicken the sauce.

Chewy Chocolate Cookies I

I used 3 cups of flour and substituted 1/4 cup brown sugar and added reeces pieces. They were a little hard and not as sweet as I'd have liked, but the reeces pieces made them more flavorful. Since I'm a chocolate freak, next time I'll probably use the 2 cups of flour recommended and increase the cocoa slightly.
