Incredibly Easy Chicken and Noodles

Great recipe! My changes: To reduce sodium and fat used 2 (10.75 oz.) cans Campbells Healthy Request Cream of Chicken and 1 (10.75 oz.) can Campbells Healthy Request Cream of Mushroom. Used Swansens Natural goodness chicken broth. Used Reame's noodles- the 12 oz. packages really soak up the broth so added a 4th can of chicken broth. Added freshly ground black pepper, although white would be better.

Roasted Brussels Sprouts

Wonderful! I'm sure this is the most healthy brussels sprouts recipe that I have cooked since you pour nothing down the drain. Great leftover food. Next time will "blacken" a bit more. Didn't convert my 14 year old, but she eats lima's, broccoli, and peas so I don't complain!

Buttermilk Coleslaw

Nice, basic, and easy recipe. A mandolin or food processor works great as freshly shredded vegies are always better than bagged if you have the time. I added a few tablespoons of non fat sour cream that I had leftover in the fridge. If your buttermilk flavor is too strong, reduce the amount or try a different brand- some are less tangy than others.

Chicken Rice Mexicana

Very good. Add 1/2 cup of your favorite salsa- we usually have some in the fridge- to the rice to make "Mexican Rice" for extra flavor.

Slow Cooker Chicken and Dumplings

This is great. Made just a couple of modifications: Chicken broth instead of water Added 4 drumsticks for flavor- worked great. Added 1c frozen peas and 1c lima beans 1 can of cream of chicken and 1 can of combo cream of chicken/mushroom One can od buttermilk grands biscuits- allow for expansion- my crock was 1/2 below rim when added the biscuit dough, rising caused some overflow during last 30 mins. "Dumplings" cooked nicly after 30 mins,

Slow Cooker Adobo Chicken

I give this 4 stars for giving me the idea of using a slow cooker to make adobo, a dish that I have made many times. Otherwise, the actual ingredients are make a very basic adobo, and miss a couple of common ingredients. Try using red or white wine vinegar, but at a minimum use cider vinegar- white vinegar should be last resort. Add the traditional adobo ingredients- 10-15 whole black peppercorns and 1-2 bay leaves. Add 1-2 Tbls. of brown sugar. I recommend using reduced sodium soy sauce. I like Aloha brand, but there are other good ones. I did not need to add water. Finally, try adding a cup of coconut milk- I like the ones from Thailand found in the Asian section of your store or at an Asian grocery.
