Chicken Marinade

This is a great recipe that all my guests raved about. Prep is very easy. I did make the mistake of trying to marinade it for 24+ hours and although it was very tasty it absorbed a lot of the salt from the soya sauce. Either go with the recommended 4 hour marinading time or try sodium free soya. All in all - this is now my favorite chicken recipe.

Asparagus Wrapped in Crisp Prosciutto

Chicken Breasts with Balsamic Vinegar and Garlic

Oven Pot Roast

Oven Fried Chicken II

I used dried tomato and oregano salad dressing mixed with the egg and I used Japanese panko crumbs instead of bread crumbs. I preheated the oil as was suggested in another review. It is oily BUT then - it IS fried chicken. We were pleased with the taste of the coating. Overall - very easy to make and I'll do it again.

Italian Halibut Chowder

I had a party of 8 for dinner so I used about 4 pounds of halibut and added a pound of peeled prawns. Everyone raved about it but I thought the sauce overpowered the flavour of the halibut. I will make it again though.

Broiled Lemon and Garlic Tiger Prawns

This was a big hit with my guests. I used fresh garlic but found that the lemon juice turned it a little blueish in color. It was also suggested by my health conscious wife that it was not necessary to have butter to dip the prawns in as they had enough juice/butter on their own. Hence, next time I will cut back on the butter to about 1/3 of a cup.

Tangy Dijon Glazed Ham

This recipe is Gr8. I didn't have and couldn't find dried cherrys so I used sliced up marichino cherries. All my guests raved about the sauce and the flavour of the ham. I used the suggestion of covering the bottom of the pan with tinfoil to make clean up easier and would advise doing that.

Alternative Baked Salmon

I prepared this for a group of 10 last night using 6 pounds of Chinook Salmon filets. I also used Japanese Panko crumbs and chopped fresh garlic (I doubled up on that over the dried product). It took approx. 30 minutes to bake at 350 degrees because my filets were about 1 3/4 inches thick. I then browned it under the broiler for about 5 minutes. It stayed lovely & moist. It got rave reviews. My company left with the leftovers and called this morning to report that they had a little of that as soon as they arrived home.
