Pesto Polenta Lasagna

Very smart base recipe! Polenta works wonderfully as a substitute for noodles, and makes the meal lighter and let the other ingredients used stand with their own flavors. I did mine in this order: layer of polenta, layer of pesto, layer of fresh spinach, layer of onions (1/2 of a white) and fresh tomatoes (about 7 romas), layer of ricotta cheese, layer of sauce, next layer of polenta,layer of mozzarella, then topped with pinenuts and fresh parmesean! It was fantastic and I may never eat noodle lasagna again!

Chocolate Chip Cheese Ball

so tasty! i have made this more times than i can count for certain occasions. some tips on this: NO LOWFAT ALLOWED! its too runny. and also, if you can't get it to form into a ball, you dont have enough sugar. add just a little extra at a time and it will be moldable. another good time saver- stick it in the freezer instead of the fridge. cuts the time in half. i also like to skip the nuts, add extra choc chips, and roll the ball in toffee bits. and then definately serve with chocolate grahms!

Pear and Gorgonzola Cheese Pizza

i get requests for this pizza ever time i have to bring a dish. and i love to make it as a treat for myself too! the only thing ive changed over the 15+ times making this is that i use emerald brand glazed walnuts instead. its an extra touch of decadence and it fits perfectly!

Hot Ponderosas!

i used more cheese than called for, and i think it helped for the burning problem. i had to cook these suckers much longer than the 1 minute described, and none burnt. they were good, but i actually thought they needed more flavor. i would more than double the cheese and herbs next time. also tasted good with a little marinara.

Grilled Eggplant, Tomato and Goat Cheese

i used much more balsalmic and olive oil and let the eggplant marinate for a while. i used mozzarella also. these were so tasty! the cheese melted perfectly and eggplant cooks great on the grill! everyone loved them. good to serve with bread.
