Flourless Chocolate Cake II

This cake was okay. I used truvia instead of sugar and it came out crumbly and dry. Perhaps I mis-converted the sugar required. The texture and flavor were better after refrigerating overnight.

No-Noodle Zucchini Lasagna

I've been making a variation of this for years, but hadn't cooked it in awhile. We used sliced mozzarella, which makes it super easy to layer. Ground turkey, finely chopped broccoli in the ricotta mixture, and four cheese pasta sauce.

Ricotta Mochachino

I made several adjustments because the original recipe was too chalky and not chocolatey enough for our taste. We used half and half instead of powdered creamer and doubled the halfand half, cocoa, and vanilla extract. We also topped it off with whipped cream! Raised the carb count, but it tasted just like Starbucks!

Lemon Dijon Wings

Fantastic! My husband and I agreed that this was the best chicken we'd ever had, let alone made at home! We used chicken tenders instead of wings and cooked them on our indoor grill. I set aside a little of the sauce for basting, so we didn't have the extra step of simmering the marinade. They turned out great! We're going to try baking them next time.

Sausage Stuffed Mushrooms II

Great foundation with so many possibilities! We used button mushrooms, but would like to try baby portabellas next time. I only used half a brick of neufchatel cheese instead of cream cheese (but would have used the whole thing if I'd had it on hand), and topped them off with a little shredded cheddar cheese. We had leftover filling and used it to stuff a pepperocini and a red bell pepper. Very tasty! We will try these again and vary the ingredients with some of the suggestions here.

Spinach Mushroom and Ricotta Fettuccine

This is a great "basic" recipe and needs to be seasoned to taste. I chopped the mushrooms instead of using whole slices and added minced garlic, italian seasoning, red pepper flakes, sea salt, ground peppercorn, and shredded romano cheese. It turned out well and is a healthy altenative to the heavy cream in fettucine alfredo.

Carrot Rice

This was an interesting recipe, added a little kick to plain old rice! I made brown basmati in a rice cooker and then sauted with the remaining ingredients and the juice from half an orange which kept it moist and flavorful. Next time I'll use less cayenne, phew! I served this with grilled garlic asparagus and the "Local Kine Wontons" (sans crabmeat) from this site. A very nice meal, but the leftovers were even better the next day! Thanks!

Creamy Asparagus Pasta

My cream sauce curdled, so I threw together a quick lemon butter sauce. It turned out fine and saved dinner from being a total loss. Aside from that, I felt that the subtle flavors of the aspargus were cooked away. It would be better off lightly cooked or broiled with a little butter and garlic. I probably won't attempt to make this again. Thanks anyways.

Local Kine Wontons

These were so good! I made mine vegetarian by leaving out the crab and adding more water chestnuts and green onion. Unfortunately, I made a few "cooker errors"... I had tried baking half and frying half to see which way I liked them. Fried is definitely best! I didn't have enough oil so I tried to flip them over to get the top cooked and they came apart. The esthetic qualities didn't affect the flavor, they were still very yummy! I will surely make these again, the right way.

Pineapple Enchiladas

WOWZERS!!! These were suprisingly delicious! I added some roasted red peppers, red onion, and a little bit of chopped jalapeno. It was a great marriage of sweet and spicy flavors. We just loved these and will make them again and again! Thanks!!!
