Mexican Rice Pilaf

Just made this, and it was great! I only use brown rice, not white and this was the only recipe for the brown rice that I could find. Only thing was I left out the jalapenos. I will make this every time we have Tex-Mex in my house. Perfect!!

Vegetarian Meatloaf

WOW! We have ditched red meat for about 3 years now and my daughter missed meatloaf the most. This was a fantastic substitute! I only used about 1/2 the amount of BBQ sauce and used ketchup in place of the other half.

Marvelous! I loved it but my family thought it a bit too spicy...next time I will only add 1 can of the hot tomato sauce. AND there definitely will be a next time! THANK YOU!

Slow Cooker Italian Beef for Sandwiches

TO DIE FOR!! Don't have reservations about trying this recipe. I made a few small changes: added 2 pkg italian dressing mixes and cut out salt and used garlic powder instead of garlic salt because the dressing had enough sodium. Also added a whole jar of mild pepperoncini peppers undrained. My neighbors wanted to know what I was cooking! They could smell it next door! Took out the roast and shredded it with a fork, used cornstarch and water to thicken the juices in the pan, then added the meat and stirred well then served. My kids loved it!

Artichoke Chicken

mmmm...delicioso! Make this all the time. Sometimes I just use cheddar or even monterey jack if I don't have feta. If I'm short on time, I will cook pasta at the same time the artichoke mixture is cooking and then drain pasta and stir it on in to make a huge pan of creamy goodness. THANKS for the recipe!

Tangy Honey Glazed Ham

WOW! I grew up in the kitchen having to take care of the family and although I am young, I have cooked my share of hams! This one was delicious! Absolutely loved it. I have made hams similar to this but without the cloves, orange, and honey. I only used a 5 lb. ham but didn't change the recipe so we could have plenty of that yummy glaze. I highly recommend this....go ahead try it!

Cookie Dough for Ice Cream (Eggless)

GREAT! No problems whatsoever with this recipe. I used miniature chocolate chips when I made this along with some homemade vanilla ice cream and--voila!--great cookie dough ice cream. I have also doubled this recipe with wonderful success!

Carnation® Caramel Sauce

TEN STARS! I have used this with Eagle Brand, Nestle, Walmart brand, Meadowbrook, fat free, etc, etc. It turns out EACH and every time. I would point out that if you have ever made homemade candy of any type, this recipe will be super easy! I can understand how everyone who rated this one low, did so. It is really easy to scrape the sides of the pan---but DON'T....this is what causes all that sugar on the sides to turn the sauce gritty. Also, don't let it turn too brown in color, this will make it taste burnt. You should take it off the heat about a minute after you notice the color changing. Be careful, once the color begins turning, it will go quickly! You will notice an awkward smell, but don't worry, it is not burnt....yet. The key is keeping your eye on it while it is cooking. One other thing, when pouring the milk in, it is helpful for me to add about 3 Tbsp and stir that in (since it foams up so much) and then when that is stirred in add a little more and stir and then add the rest. This recipe is the greatest!
