Crispy Rosemary Chicken and Fries
Just made this tonight and it was a hit with the family. I baked it covered loosely with foil for the first 45 minutes and then removed it for browning the rest of the time, basting the last 15-20 min. The red potatoes caramelized nicely and the chicken was moist and delicious. I will be making this again - thank you!

This yummy basic pesto recipe was so easy to make. I toasted the pine nuts first and also decreased the number of garlic cloves to taste. If you do add the optional parsley, make sure it is Italian parsley and not the curly leaf kind. Pesto is so versatile - it can be used in traditional pasta dishes, fish, chicken, sandwiches, salads, on eggs, in pizza. Make extra and freeze some for later use!

Angel Hair Pasta with Shrimp and Basil
I made this dish last night and my family really enjoyed it. Along with the fresh herbs and wine called for, I used 2 lbs of shrimp, one 14 oz can of Italian style stewed tomatoes (diced and not drained), 3 Roma tomatoes from my garden, and 1 lb. of sliced mushrooms to give the dish more body. It seemed to make the correct ratio of sauce to pasta and was light enough for a perfect summer pasta dish. Thanks!
