Orange and Lentil Soup

Not the best thing to do with lentils. It was ok, I ate it, but I was the only one in the house who would. To me it seemed to be lacking in dimension with the spices, but I can't put my finger on what would perk it up...nutmeg, allspice, saffron? My daughter & husband didn't like the orange flavor, said it was just weird. I followed the recipe as written, except I only had vegetable stock on hand. (which I've never had a problem subbing for in other recipes.) I also tossed in a clove of fresh garlic with the onions. I don't think I'll bother trying it again with chicken stock.

Pizza Dough II

I've tried several pizza dough recipes before finding this one, and it was by far the best. (I'm a very experienced baker & know what I'm talking about.) To the reviewer that said the texture was wrong: how much did you need the dough? You must not skimp on this step! The recipe says 8 minutes, but there are a lot of variables involved. Most of the time, I find my self needing for much longer to get the desired look & feel to the dough. At least 10-15 minutes. It needs to be completely smooth, and almost silky looking. Pull it apart a few times, does it stretch or break apart? Be careful not to use to much flower while working with the dough. This is also a good recipe to hand toss if you are talented.

Bodacious Broccoli Salad

This is a great starting point for broc salad. The dressing and everything is perfect, but I like to add more stuff. It just isn't the same with out raisins. If you think you don't like raisins in broccoli salad, try yellow raisins...mmmm. I also like to add chopped water chestnuts, and sunflower seeds. Now that's a broc slaw!

Cream of Mushroom Soup I

SOOOOOO GOOD!!!!!! About a 1,000 times better than the canned stuff. I didn't have any sherry so I used some white cooking wine instead. I ate the whole pot!

Apple-Glazed Pork Chops

This is so good the first time I made it, my husband requested it again & again. So we had it 3 nights in a row! He doesn't like onions, so I just skip the sauted onion and apple mixture. Instead I put about 2 tsp of dried minced onions in with the sauce. I also found garlic adds nicely to this dish, so I add about 1/2 a clove of minced garlic. We serve it over brown rice.

I can only give this recipe 4 stars if you make it the way it's written. However, if you use a premium rice vinegar, and sesame seed oil it tastes better than take out.

Honey Crunch Pecan Pie

This recipe tastes great, but has a major flaw IMO. What is with step 5? There is no way possible to evenly spoon sticky 1/2 size pecan pieces over the top of the pie. They are molten hot, so forget trying to arrange them nicely! You can't get the pecans on evenly. Once this baked, the top created a VERY hard crust, that was next to impossible to cut thru. Next time I will do either two things: either place the "topping" mixture on the bottom of the crust, or pour the hot honey/sugar mixture over pre-arranged pecan pieces already on the top of the pie.

Honey Walnut Shrimp

WOW this was so easy and SO GOOD!!! The batter looked a little odd, but I found the chicken easier to coat if it was dry. I wish I made more, and next time will double the batch of chicken. There should be more than enough sauce.

Thai Pineapple Chicken Curry

OMG This is THE BEST Thai Curry dish I've EVER eaten!!! Even my DH loved it, and he normally doesn't like curry or Asian food very much. The only think I did differently is the amount of spice. The red curry paste I have is pretty strong, and from past experiences I knew 1/4 cup would be way too much (I didn't even have that much anyway!) So I used 1 Tbs of curry paste. Since I wanted DH to eat it, I balanced the fish sause to 1 Tbs as well. I all of both peppers, so I will need to double the amount of chicken next time (there will be plenty of sauce for that.) I also added about 1 Tbs of corn starch to some 1/4 cup of chicken stock to thicken the sauce just a bit. I think it would also be good with baby corn!

West Tennessee Corn Bread

I was looking for a gluten free corn bread recipe when I found this one. I was shocked to see it didn't call for any other flour! It bakes up really light and flavorful. I liked it so much, I had to bake a second one right away because we at it all before dinner was served!

Caramel Ham Loaf

Very good ham loaf! I followed the recipe exactly. The only thing I will do differently next time is to add some ketchup to the glaze (and therefore cut back on some of the sugar.) I really enjoy the "home style" taste of the tomatoes in the sauce.
