Chicken in Tarragon Cream Sauce

Made this for 2 and low sodium. 6 chicken strips were just right for 2 servings. Seasoned with Penzey's Florida Seasoned Pepper. Low sodium broth, 2% milk and used roux to thicken. This was easy and fast. Served with no salt microwave brown rice and chopped lettuce.

No Bull Burritos

Cheap, fast, easy, filling. Nothing fancy but you can season to your taste. I make them lower sodium because of diet restrictions. They're not bad left overs either.

Easy Taco Rolls

Too much sodium & MSG in packaged taco seasoning for us. I left out package of taco seasoning and used 2 kinds of chili powder, garlic powder, onion powder, Mexican oregano, cayenne(just a little) to taste instead. threw some chopped onion and garlic in with Xlean beef and used Frozen corn, reduced sodium pintos(extra protein) then added no sodium beef stock to mixture to skillet instead of water. Used shredded Mexican cheese instead of cheddar--we like it better on TexMex/Mexican foods. I Sliced up an avocado, chopped a tomato, put out some sour cream, hot sauce and more salsa to be added to taste. Dish is plenty for us to have leftovers & they were even better.

Pasta Bake

This is a good basic meal recipe. You can add what you like, change meat, go vegan, spice it up, etc. Reasonably quick to make fresh or make ahead of time and pop in oven when you want. Just add a salad, garlic bread, a glass of wine(or whatever you drink) and eat.

Italian Breaded Pork Chops

These are great. Thick boneless chops were tender, moist and flavorful. Only changes were using garlic flavored oil, no salt seasoning, dredging in Wondra flour and double dipping in egg mixture and Italian crumbs.

Herb Biscuits

Good base recipe. You can use butter, soy margarine, regular margarine depending on your taste/diet. Herbs you prefer(using chopped fresh garlic tonight) or how about cinnamon sugar for breakfast.

Ground Beef Vegetable Soup

This is our go to meal for cold weather. Have been making it for many years. Use less ground meat but lots of frozen / fresh vegetables,low sodium beef broth, no salt seasonings, fresh or dried herbs to taste, lots of garlic, low or no salt tomatoes and tomato sauce and sometimes a little pasta. Occasionally grate some Parmesan on top of each serving. Serve with a good crusty bread.

Southern Collard Greens

ham bone, ham hocks, smoked turkey wings all work well for seasoning and can add meat to the greens. no cooking oil, use fat trimmed from smoked ham. love the pot liquor by itself, just crumble some cornbread in a bowl and add the liquor.

Slow Cooker Chili II

Added more garlic cloves and garlic powder. Used kidney and pinto beans drained and rinsed. Also added a tablespoon of Cumin for flavor without adding more heat. We like to serve over rice and top with sour cream, scallions and fresh lime juice.

Amazing Pork Tenderloin in the Slow Cooker

Nice. Replaced dry onion soup mix and water with 1 cup French Onion Soup. Dry soup mix has MSG in it & gives DH migraines. Added some Vidalia onion I needed to use up.

Beef Nacho Casserole

Well I make some changes due to diet restrictions--low fat, low sodium and no MSG. It's still a good recipe. I added cumin, garlic powder and onion powder and occasionally throw in some pinto or kidney beans for fiber or instant brown rice if the low sodium chips have been eaten already. It's easy, fast, filling and relatively cheap and leftovers are great the next day, if there are any leftovers. Sorry I can't eat it as written but guess it one of prices you pay if you live long enough.

Roasted Garlic Zucchini and Tomatoes

Made this for supper dinner last night. Used grape tomatoes, no red pepper flakes(I forgot), sprayed dish with PAM, roasted zucchini first then added sweet onions, garlic and tomatoes. Forgot the cheese and not fresh basil had died. Did drizzle a little olive oil over everything. Over cooked so some was really browned but this stuff was still really good even if I screwed the recipe up. Slightly carmilized veges were fantastic. Served with fresh macaroni salad and deli chicken.

Boiled Tongue

This takes me back. Every spring mom would fix a big pot of calf's tongue(tenderer she said), fresh green beans and new potatoes. Never used any seasoning but salt. Really good but nobody in my family(husband and kids) will eat it/even try tongue.

Prego® Easy Skillet Chicken Parm

Pretty good. Did bread chicken first. Have also added small can of mushrooms, frozen chopped onions, roasted red peppers and a little red wine to sauce. Have used same sauce but with ground beef or veal patties. For meat patties mix with garlic and Italian seasonings. And don't forget the cheese in patty and on top.

Mom's Purple-Hull Peas

Just picked purple hulls are the best. If you live in the south you can get them at local farmers market, road side stand or friend/family garden. Fresh tender baby okra pods are best. I leave out the sugar, baking soda and sub ham for bacon. Occasionally add some chopped onion to pot and top with chopped fresh ripe tomatoes/green tomato relish. Server with hot, buttermilk cornbread(stone ground white cornmeal) and fried chicken or pork chops. Comfort food from childhood.
