About this Cook
I remember the 50's. Have been cooking since I was a kid. Love to experiment with food and try new things but have to watch what I eat now--the "if it tastes good spit it out diet". I just hate the cleaning up after. We're moving from the beach to the GA. foothills and closer to Atlanta. Most retirees do it the other way.
My favorite things to cook
Lousy baker--no desserts or bread from scratch. To cook--whatever strikes my imagination.
My favorite family cooking traditions
Having Christmas dinner on Christmas Eve. Everybody knows where the leftovers are and Mom can take it easy and enjoy the holiday too.
My cooking triumphs
Thanksgiving dinner for 14--everything turned out perfect, for once.
My cooking tragedies
Not wearing glasses when I made a pot of chili-- I "dumped" in cayenne pepper not chili powder. Making my mothers gingerbread and using self-rising flour. I never told her about that.

Chicken in Tarragon Cream Sauce
Made this for 2 and low sodium. 6 chicken strips were just right for 2 servings. Seasoned with Penzey's Florida Seasoned Pepper. Low sodium broth, 2% milk and used roux to thicken. This was easy and fast. Served with no salt microwave brown rice and chopped lettuce.

No Bull Burritos
Cheap, fast, easy, filling. Nothing fancy but you can season to your taste. I make them lower sodium because of diet restrictions. They're not bad left overs either.

Easy Taco Rolls
Too much sodium & MSG in packaged taco seasoning for us. I left out package of taco seasoning and used 2 kinds of chili powder, garlic powder, onion powder, Mexican oregano, cayenne(just a little) to taste instead. threw some chopped onion and garlic in with Xlean beef and used Frozen corn, reduced sodium pintos(extra protein) then added no sodium beef stock to mixture to skillet instead of water. Used shredded Mexican cheese instead of cheddar--we like it better on TexMex/Mexican foods. I Sliced up an avocado, chopped a tomato, put out some sour cream, hot sauce and more salsa to be added to taste. Dish is plenty for us to have leftovers & they were even better.
