Carrot Cake III
Fantastic cake! Carrot cake is my dad's favorite so I made it for him, he LOVED it!
I only made a few changes, mostly after reading numerous reviews: added 1/4 tsp nutmeg, used 3 tsp cinnamon, used walnuts instead of pecans, used 1/2 white and 1/2 brown sugar, and for the frosting I only used 1/4 cup butter, 2 cups sugar, and omitted the nuts, though I may try those next time. All in all, a wonderful cake!
