Yummy Sweet Potato Casserole

Unbelievable! I made this as a last minute side dish for Easter. I boiled the sweet potatoes, but I agree that baking usually results in tastier potatoes. I made it the night before, and baked the next day. I could have eaten the entire pan myself!

Easy Alfredo Sauce I

What a great, easy base recipe. I added a good amount of fresh coarse ground black pepper. I used it over sauteed vegatables and pasta. I agree with the reviews that half the recipe is enough for one pound of pasta.

Smashed Potatoes

Thought this recipe was great. The key is to let the potatoes cool. I used a silicone baking sheet to bake them on. They came out nice and crispy. Thanks for a great recipe!

Mushroom-Stuffed Tenderloin

Thought this was a very good recipe. I made a few changes. I added about 1 tbs. olive oil to stuffing as it was too dry. Once I placed the filled beef on the rack, I placed bacon strips over the openings. I sprinkled with some salt, pepper, and thyme. I baked baked uncovered for 15 minutes, then for 30 minutes more uncovered. It was done perfectly. Be careful not to overcook, as it's slightly dry to begin with. Next time I will drizzle with a little red wine before baking. My family really enjoyed this dish.

Simple Sweet and Spicy Chicken Wraps

A wonderful, easy, tasty recipe. My entire family thought it was a great change of pace for a different tasting wrap. I added slightly more honey and cayenne. For the dressing, I used 1/2 mayo and 1/2 sour cream. Delicious. Next time I'm going to try substituting Greek yogurt.

Mongolian Beef and Spring Onions

A delicious recipe. I used skirt steak as that what my local grocer had on sale. It sliced beautifully into very thin strips. The taste of the sauce was delicious. The mistake I made was to marinate the steak in a small amount of the sauce. When I fried it in the wok, the sauce burnt to the sides (I'm assuming it was the sugar in the sauce). It didn't affect the recipe; however, it took me quite a while to clean the wok!

Best Ever Sausage with Peppers, Onions, and Beer!

I've made this recipe quite a few times. My only alteration is to saute the onions/peppers/garlic before deglazing the pan. I then remove them, deglaze, and proceed with the recipe. Everyone usually prefers me to use spicy Italian sausages when I make it. Thanks for a tasty recipe!

Ricotta Gnocchi

I thought this recipe was great. I was impatient and didn't drain the ricotta, but it turned out fine. Next time though, I will try draining. I finally was able to use my "gnocchi board" that I bought from King Arthur Flour. While slightly time consuming, my gnocchi turned out very professional looking. I used my regular sauce recipe. Everyone raved how delicious the meal was.

German Red Cabbage

Made this as a side dish to a crown roast of pork. It was easy and delicious. The recipe does make a large amount. Next time, I'll probably halve the recipe. Thanks for a different side dish!

Pumpkin Ginger Cupcakes

Delicious! I made them for a Halloween party, and iced them the Satiny Chocolate Glaze from this site. I used French Vanilla pudding mix, as my local supermarket did not have butterscotch, and I omitted the crystallized ginger. They were a big hit! Thanks!

Absolutely delicious! The only change was that I added mini chocolate chips. I made one loaf and 12 muffins. Used satiny chocolate glaze from this site as topping. Very moist and flavorful. Thanks!

Satiny Chocolate Glaze

Wonderful, easy glaze. I made pumpkin cupcakes and didn't want to take the time to ice each one. I made this glaze and just held the cupcakes upside down directly into the glaze and swirled. All 12 done in under 3 minutes! The glaze hardened just enough to be perfect.

BBQ Chicken Pizza II

What a great change! I poached 1 lb. of boneless chicken, then shredded and tossed with BBQ sauce. I used my homemade pizza crust, then spread a then layer of same BBQ sauce. Sprinkled the chicken, finely diced red onion and finely diced red pepper. I finished with shredded cheddar. Would also be great cooked in a square pan and cut small for appetizers. Will definitely be made again!

Big Smokey Burgers

Easy Platz (Coffee Cake)

Very good, easy cake. I made with a few minor changes. After reading reviews, I used a 9 x 13 pan, which baked perfectly in 35 minutes. To the batter I added 1 teaspoon of vanilla extract. I reserved 1 cup of crumbs, to which I added 1/2 teaspoon cinnamon and 2 tablespoons brown sugar. I used approximately 2 cups of fresh blackberries. Everyone loved it and a great cake to use up the never-ending blackberry supply!

Vodka Sauce

I thought this recipe was outstanding. I used 1/2 pound of proscuitto and it was plenty. My only addition was about 1/2 cup of finely minced onion sauteed with the proscuitto. I was tempted to increase the amount of red pepper flakes as my family enjoys spicy food. I'm glad I didn't. Pefect as is! So much tastier than many vodka sauce recipes. A definite keeper!

Baby Back Ribs

Super easy and delicious! I added to the basic recipe. First I brushed on a mixture of lemon juice and olive oil. Then I used a dry rub on them (paprika, cumin, salt, pepper, brown sugar), then wrapped them in the foil. The next day we grilled them on the top shelf for about 1 1/2 hours (at about 350). I then took them out of the foil, brushed them generously with BBQ sauce, and grilled them over direct heat until crispy. A very big heat at the party. Thanks for a convenient, easy way to make delicious ribs.

Sarah's Banana Bread Muffins

I thought these muffins were fanastic and very easy to make. After reading the reviews, I made a few minor adjustments. I used 3/4 c. white sugar and 1/4 c. brown sugar; added 1/2 tsp. cinnamon; added 1 tsp. vanilla. For a topping, I mixed additional chopped walnuts, a dash of cinnamon, 1/4 cup brown sugar and mini chocolate chips. My muffins baked for about 18 minutes. They came out looking like gourmet muffins and tasted like it also!

Baked Salmon II

I don't eat seafood, so the review is really from my family. I didn't have time to marinate the fish. I followed the recipe with the exception of just putting the fillets in a Pyrex baking dish, covering with the liquid and covering tightly with foil. Super easy to make, and my family loved it.

Simple Cranberry Spinach Salad

What a great, simple recipe. I was looking for a spinach recipe to use up the "pillow" of spinach I bought at Costco! I already had the dried cranberries and raspberry walnut dressing on hand. I was hesitant to use the cheese; however, itwas very good with it The only change I made was to sprinkle some additional strawberry balsamic vinegar over it.
