Old Fashioned Peach Cobbler

This cobbler was a hit. I followed other reviewers advice and made 1 1/2 of the crust. I made the filling the day before. When I went to assemble the cobbler, I felt there was too much liquid. I strained and left just a small amount of liquid. I proceeded with the recipe, my only adjustment being to add about 1 cup of raspberries. What was great was that the crust did not turn soggy, even after being in the fridge for 3 days. I boiled down the remaining liquid until reduced by about half. It made a WONDERFUL pancake syrup! 2 for the efforts of 1! Will

Burrito Pie

Delicious recipe. Can be altered to your family's tastes. I cut the tortillas to fit the pan and essentially used them like lasagna noodles. I used spicy fat-free refried beans to coat the tortillas. Served with fresh chopped tomatoes, olives, and pickled jalapeno slices. Leftovers were great!

Crispy Orange Beef

I thought the flavor of this recipe was very good. I like the tip of drying the beef in the fridge. I also tenderized the beef prior to slicing. However, I did not want to fry my beef, so I used my wok and stir-fried. The result did not come out crispy, but it was tasty and I would make again.

Beef Stroganoff III

I thought this was an easy, tasty recipe. I followed most of the recipe, with these few changes. After reading reviews, I marinated in red wine first. I actually used filet mignon sliced thin (was on sale at the market!). I sautéed the beef quickly, took out, the sautéed the onions, fresh mushrooms, and the garlic. I then deglazed the pan with some red wine. I then added the beef broth, brought to a boil, turned to a simmer, then added the beef. After an hour, I added the sour cream, along with some minced fresh parsley. Served over egg noodles. Both my husband and I enjoyed it. The leftovers were tasty too!

Ken Shoe Green Beans

I thought the flavor of this was spot on. I tried it with very thin asparagus that I had on hand. As I didn't want to fry it, I blanched the asparagus in water, then drained. I followed the remainder of the recipe. Easy and very delicious. Next time I will try the green beans!

Teresa's Hearty Chicken Cacciatore

I thought this recipe was outstanding. I altered the chicken used to suit my family. I used 2 bone-in chicken breasts and 4 boneless skinless thighs. I added the breasts, cooked for 25 minutes, then added the thighs and cooked for an additional 20 minutes. I disagree with previous reviewers....I think the pancetta in necessary for the flavor in this dish. Bacon would alter the taste. Thanks for a great recipe!

Peach-a-Berry Pie

Thought this recipe was great. We bought a bushel of peaches at the market. I used my homemade pie crust. The only change was I brushed the crust with beaten egg before sprinkling with coarse sugar. I baked on a metal baking sheet lined with foil. Some liquid did run out, so I was glad I did! Can't wait to eat the leftovers!

Spicy Eggplant

Just tried this recipe and it was a hit. I substituted hoisin sauce for the oyster sauce as I can't eat seafood, and added some crushed red pepper as we like things spicy. Everyone thought the flavor was fantastic. My only fault was the consistency of the eggplant. A little too mushy for my taste. Next time I will cook the eggplant less. The leftovers were great over plain ramen noodles for lunch!

Healthier Creamy Au Gratin Potatoes

Just decided to try this recipe tonight. Of course I didn't read it through and didn't have the 1 1/2 hours to have it cook. After I had the sliced potatoes and onions in the glass baking dish, I microwaved for 7 minutes while I made the sauce. I then baked the finished dish about 1 hour. They came out perfect. My entire family loved them!

Citrus Turkey Brine

I frequently use this brine. It's perfect for Beer Butt Chicken. Everyone raves about the juiciness and flavor. I add black peppercorns and bring to a boil to dissolve the salt and get the flavors going. I'm thinking of throwing in a few dried hot chilies next time.!

Zucchini Bars

Thought this was a good basic recipe. After reading reviews, I decreased oil to 3/4 cup, added 1/2 tsp. cinnamon, 1/8 tsp. nutmeg. I squeezed the water out of the zucchini. My bars took 35 minutes to cook. I used my own cream cheese icing recipe with includes vanilla. Everyone loved them. I wished they rose a little more.

Lemon Zucchini Muffins

A very tasty unique recipe. Everyone loved them. I made a few minor changes...my lemon yogurt was 6 oz. so I made up the difference with buttermilk. Used 2 cups shredded zucchini. Used confectioner's sugar instead of regular for glaze. And I highly recommend using the glaze. I felt it made the lemon flavor really pop. Next time I make them I'm going to use my mini muffin pan. A great addition to a brunch.

Amber's Sesame Chicken

This is my family's favorite oriental chicken recipe. I don't deviate much from the original recipe, other than changing up the vegetables depending what I have on hand. I double the honey/teryaki glaze so that there is extra for the rice.

Yummy Sweet Potato Casserole

Unbelievable! I made this as a last minute side dish for Easter. I boiled the sweet potatoes, but I agree that baking usually results in tastier potatoes. I made it the night before, and baked the next day. I could have eaten the entire pan myself!

Easy Alfredo Sauce I

What a great, easy base recipe. I added a good amount of fresh coarse ground black pepper. I used it over sauteed vegatables and pasta. I agree with the reviews that half the recipe is enough for one pound of pasta.

Smashed Potatoes

Thought this recipe was great. The key is to let the potatoes cool. I used a silicone baking sheet to bake them on. They came out nice and crispy. Thanks for a great recipe!

Mushroom-Stuffed Tenderloin

Thought this was a very good recipe. I made a few changes. I added about 1 tbs. olive oil to stuffing as it was too dry. Once I placed the filled beef on the rack, I placed bacon strips over the openings. I sprinkled with some salt, pepper, and thyme. I baked baked uncovered for 15 minutes, then for 30 minutes more uncovered. It was done perfectly. Be careful not to overcook, as it's slightly dry to begin with. Next time I will drizzle with a little red wine before baking. My family really enjoyed this dish.

Simple Sweet and Spicy Chicken Wraps

A wonderful, easy, tasty recipe. My entire family thought it was a great change of pace for a different tasting wrap. I added slightly more honey and cayenne. For the dressing, I used 1/2 mayo and 1/2 sour cream. Delicious. Next time I'm going to try substituting Greek yogurt.

Mongolian Beef and Spring Onions

A delicious recipe. I used skirt steak as that what my local grocer had on sale. It sliced beautifully into very thin strips. The taste of the sauce was delicious. The mistake I made was to marinate the steak in a small amount of the sauce. When I fried it in the wok, the sauce burnt to the sides (I'm assuming it was the sugar in the sauce). It didn't affect the recipe; however, it took me quite a while to clean the wok!
