Grandma's Corn Pudding

Reviewed: Dec. 9, 2014
I made this for Thanksgiving. For years, my grandmother had made "baked corn" that we all loved. Unfortunately, we never found the recipe. This is what I remember. Followed the recipe exactly. I was nervous it wasn't done after the hour, and left in for another 10 minutes. So, mine was slightly overdone! Wonderful recipe, so happy to add it to my box!

Mexican Rice

Reviewed: Nov. 12, 2014
I thought this was a great rice side dish. I used chicken broth instead of water, and fresh tomatoes. Next time I would cut the salt to one teaspoon. And it doesn't matter to me what it's called.

Halloween Bloody Baked Rats

Reviewed: Nov. 4, 2014
Made this recipe for a last-minute Halloween dinner. I just shaped my own meatloaf recipe into large rats. Covered generously with sauce and saved a little for after they baked. I applied all decorations after baking. I used black olives halved for ear,the star end of a black olive as a nose, slices of green olives for eyes, orzo as whiskers, and the rib of a kale leaf as a tail. My husband had no idea what we were having for dinner. When I put them on the table, he said "GROSS!" Guess that means they looked good! Served with twice-baked potatoes that I had piped into the shape of ghosts.

Cajun Chicken Pasta

Reviewed: Oct. 4, 2014
Overall I thought the recipe was good. I did alter slightly...I cooked the chicken first and removed. I then cooked the onions/peppers/mushrooms and fresh garlic. I cooked them longer than the 2-3 minutes. I used 8 ounces of rotini pasta and thought it was the perfect amount. I used a small amount of pasta water to get the right consistency for the sauce. After it was made, I tossed in a small amount of cubed fresh mozzarella. This recipe lends itself to tweaking it to your family's tastes. Leftovers microwaved perfectly.

Old Fashioned Peach Cobbler

Reviewed: Aug. 2, 2014
This cobbler was a hit. I followed other reviewers advice and made 1 1/2 of the crust. I made the filling the day before. When I went to assemble the cobbler, I felt there was too much liquid. I strained and left just a small amount of liquid. I proceeded with the recipe, my only adjustment being to add about 1 cup of raspberries. What was great was that the crust did not turn soggy, even after being in the fridge for 3 days. I boiled down the remaining liquid until reduced by about half. It made a WONDERFUL pancake syrup! 2 for the efforts of 1! Will

Burrito Pie

Reviewed: Jul. 11, 2014
Delicious recipe. Can be altered to your family's tastes. I cut the tortillas to fit the pan and essentially used them like lasagna noodles. I used spicy fat-free refried beans to coat the tortillas. Served with fresh chopped tomatoes, olives, and pickled jalapeno slices. Leftovers were great!

Crispy Orange Beef

Reviewed: Feb. 24, 2014
I thought the flavor of this recipe was very good. I like the tip of drying the beef in the fridge. I also tenderized the beef prior to slicing. However, I did not want to fry my beef, so I used my wok and stir-fried. The result did not come out crispy, but it was tasty and I would make again.

Beef Stroganoff III

Reviewed: Feb. 13, 2014
I thought this was an easy, tasty recipe. I followed most of the recipe, with these few changes. After reading reviews, I marinated in red wine first. I actually used filet mignon sliced thin (was on sale at the market!). I sautéed the beef quickly, took out, the sautéed the onions, fresh mushrooms, and the garlic. I then deglazed the pan with some red wine. I then added the beef broth, brought to a boil, turned to a simmer, then added the beef. After an hour, I added the sour cream, along with some minced fresh parsley. Served over egg noodles. Both my husband and I enjoyed it. The leftovers were tasty too!

Ken Shoe Green Beans

Reviewed: Oct. 6, 2013
I thought the flavor of this was spot on. I tried it with very thin asparagus that I had on hand. As I didn't want to fry it, I blanched the asparagus in water, then drained. I followed the remainder of the recipe. Easy and very delicious. Next time I will try the green beans!

Teresa's Hearty Chicken Cacciatore

Reviewed: Oct. 4, 2013
I thought this recipe was outstanding. I altered the chicken used to suit my family. I used 2 bone-in chicken breasts and 4 boneless skinless thighs. I added the breasts, cooked for 25 minutes, then added the thighs and cooked for an additional 20 minutes. I disagree with previous reviewers....I think the pancetta in necessary for the flavor in this dish. Bacon would alter the taste. Thanks for a great recipe!

Delicious and easy. Followed the recipe exactly as written. I served with sweetened whipped cream that I had added a little vanilla to. Everyone loved it!

Peach-a-Berry Pie

Reviewed: Sep. 2, 2013
Thought this recipe was great. We bought a bushel of peaches at the market. I used my homemade pie crust. The only change was I brushed the crust with beaten egg before sprinkling with coarse sugar. I baked on a metal baking sheet lined with foil. Some liquid did run out, so I was glad I did! Can't wait to eat the leftovers!

Spicy Eggplant

Reviewed: Jul. 29, 2013
Just tried this recipe and it was a hit. I substituted hoisin sauce for the oyster sauce as I can't eat seafood, and added some crushed red pepper as we like things spicy. Everyone thought the flavor was fantastic. My only fault was the consistency of the eggplant. A little too mushy for my taste. Next time I will cook the eggplant less. The leftovers were great over plain ramen noodles for lunch!

Healthier Creamy Au Gratin Potatoes

Reviewed: Jun. 19, 2013
Just decided to try this recipe tonight. Of course I didn't read it through and didn't have the 1 1/2 hours to have it cook. After I had the sliced potatoes and onions in the glass baking dish, I microwaved for 7 minutes while I made the sauce. I then baked the finished dish about 1 hour. They came out perfect. My entire family loved them!

Citrus Turkey Brine

Reviewed: Jun. 13, 2013
I frequently use this brine. It's perfect for Beer Butt Chicken. Everyone raves about the juiciness and flavor. I add black peppercorns and bring to a boil to dissolve the salt and get the flavors going. I'm thinking of throwing in a few dried hot chilies next time.!

Zucchini Bars

Reviewed: Sep. 20, 2012
Thought this was a good basic recipe. After reading reviews, I decreased oil to 3/4 cup, added 1/2 tsp. cinnamon, 1/8 tsp. nutmeg. I squeezed the water out of the zucchini. My bars took 35 minutes to cook. I used my own cream cheese icing recipe with includes vanilla. Everyone loved them. I wished they rose a little more.

Lemon Zucchini Muffins

Reviewed: Aug. 28, 2012
A very tasty unique recipe. Everyone loved them. I made a few minor changes...my lemon yogurt was 6 oz. so I made up the difference with buttermilk. Used 2 cups shredded zucchini. Used confectioner's sugar instead of regular for glaze. And I highly recommend using the glaze. I felt it made the lemon flavor really pop. Next time I make them I'm going to use my mini muffin pan. A great addition to a brunch.

Amber's Sesame Chicken

Reviewed: Jun. 28, 2012
This is my family's favorite oriental chicken recipe. I don't deviate much from the original recipe, other than changing up the vegetables depending what I have on hand. I double the honey/teryaki glaze so that there is extra for the rice.

Yummy Sweet Potato Casserole

Reviewed: Apr. 12, 2012
Unbelievable! I made this as a last minute side dish for Easter. I boiled the sweet potatoes, but I agree that baking usually results in tastier potatoes. I made it the night before, and baked the next day. I could have eaten the entire pan myself!

Easy Alfredo Sauce I

Reviewed: Apr. 12, 2012
What a great, easy base recipe. I added a good amount of fresh coarse ground black pepper. I used it over sauteed vegatables and pasta. I agree with the reviews that half the recipe is enough for one pound of pasta.
