Grandma Johnson's Scones

After 786 mostly rave reviews, there's not much more I can add that hasn't already been said. These scones are FAB! The dough is a little dry, but it's supposed to be... that's the nature of a scone dough (as opposed to biscuit dough, which is very wet). Make sure your butter is ice cold when you cut it into the flour mixture - those hard little nubs of butter are what make the finished product light and airy. I can't say enough about the recipe - it's pretty perfect as is.

Black Bean Vegetable Soup

This soup is really delicious and came together very quickly. I substituted 2 3/4 cups cooked black beans for the canned ones. Next time I will try frozen corn instead of canned as one of the other reviewers suggested to reduce the amount of sodium. I prefer to add my own seasoning at the table to punch up the flavor. By adding a squeeze of fresh lime and a bit of salsa into my bowl, I found that it perked right up without adding any additional salt. I will definately be making this again.

Spinach Chickpea Curry

This was an extremely easy, very tasty dish. I whipped this up in no time after work, and it turned out great. I did bake my tofu first, as some of the other reviewers had reccomended, but other than that I followed the recipe exactly. Thanks for this quick healthy recipe bellacoola!

World's Greatest Vegetable Broth

This vegetable broth really lives up to it's name. I made a batch today, and it was by far the BEST broth I've ever tried. It took a little extra time than a normal vegetable broth does to make (due to roasting the vegetables), but the result is so rich in flavor---I can't see myself using my old broth recipe ever again. I can't wait to use this as a base for cooking legumes and rice, as well as a soup base.
