Chocolate Teddy Bear Cookies

This one is time consuming, alright, and the taste is good but not fantastic. They look so very cute, though. So what I have done to make them carry their weight in trouble is use one or two bears as the top cookies in gift cookie tins or bags containing decorated sugar cookies or some other less designer intensive cookie. The little bear acts as emcee for the treasures by which he is surrounded. ;o)

California Kabobs

This was a great recipe. I love that it can take a relatively small steak and literally stretch it to become a satisfactory, filling, flavorful, and fun meal! This was our first home experience with kabobs, and I know we'll be doing this again.

Avocado Corn Soup

This one needs help. Four ingredients is not enough...and eight is only barely in a last ditch effort to add more flavor to an, interesting, but otherwise overpoweringly bland concoction. I like the use of avocado for a cream soup base, however, and will work on this. Also LOVE the history of the Haas avocado. This just isn't the best use of it, or is not taking it to the level we all KNOW it can reach.

Curried Tofu Salad

The "kick" seemed just about right to me. The heat is nicely offset by the mildness of the tofu, itself. The heat and sweet was also nice. I served this in small sauce dishes as a side with Holiday Chicken Salad from this site. DH, not fond of tofu, was not impressed, understandably; it's a texture thing.

Egg Foo Young

Come on. Be honest. Isn't there just something inherently FUN about fixing something that is fun to SAY? Anyway, as three added bonuses, this was easy, quick, AND tasty. We had this with Thai chili sauce. Nice blend of supper/breakfast tastes. So, what would that make it? Supfast?

Slow Cooker Thai Peanut Pork

Fireguy, this is a winner at our house. It turned out so pretty, we enjoyed an impromptu candlelit dinner with chinaware, crystal, silver the works! I had to come up with a homemade concoction to dub teriyaki sauce (Worcestershire sauce, honey, and fresh ginger). This was just the right combination of hot, sweet, and smooth. Don't skip the lime if you can at all help it. Would give it another star, if I could. Served with a puree'd veggie soup, a tossed salad, and rice. Company special and so, so easy! Thanks for posting.

Sassy Sausage and Black Bean Soup

This was very good. I added a bit of green pepper at the outset. I had to use pork sausage instead of beef, but it was good. The salsa I used was Dee's Famous Salsa from this site. Like others, I felt it would play well over a starch, so we had it over a heavy duty corkscrew type macaroni. DH topped his with cheddar. I think we'll have take two tomorrow night by adding 1/2 cup corn and serving with a savory corn muffin.

Thirty Minute Yellow Cake

This went together in no time; I was very pleased with the resulting cake, and a bit surprised at how (too, too) easy it is to prepare that many calories' worth of temptation for just the two of us. Could spell trouble!

Egg Noodles

Well...this must be easy enough. I've made it twice already. Once was a sort of impromptu "What shall we do for dinner?" moment, and quick calculations suggested this in chicken broth with some veggies and a bit of crumbled sausage. >>> I am still working on my technique; my noodle results are not as tender as I would like, yet, but I do think it has to do with my novice standing. I'll keep on.

Date Cookies

These are good but due to food allergies and pantry deficiencies I had to change things up just a bit. I used crushed flaked rice cereal in place of the nuts...it worked. My cloves were whole, so I had to crush them ... that worked, too. I did bake 12 minutes after chilling batter flattened in freezer for 15 min. I just couldn't wait the full hour & a half chill time.

Zucchini Yogurt Multigrain Muffins

Well I overdid the zucchini by guesstimating rather than measuring, and I substituted fresh pineapple for the apple sauce, because apple sauce is not a standard item in this region. When the weight of all that wonderfully moist goodness prevented the muffins from rising to the occasion, I filled the dimpled domes with cream cheese frosting, so the end result was a muffin containing: zucchini, carrot, pineapple, lemon zest and just a tad of lemon juice along with wheat germ, oatmeal, and rasins. Can't feel too bad about dimples with all that packed in!! (My bad...not the recipe's fault). Very delicious.

Carrot Cake with PHILLY Cream Cheese Icing

Philadelphia will love this... I only used the icing as a quick save to some crestfallen muffins. I scaled it down to do the few muffins I had, and it was a worthy save.Everyone thought that's how I MEANT for them to look and taste. Yea!

Quick Quiche

Yes, changes made...but permission was given at the outset. I added 3 spears young asparagus, 1 sliced shitake mushroom, used red onions, cheddar cheese and ended up having enough "batter" to do a small quichette besides. Had to add about 15 min. to cook time for the 9 in, but the quichette was done in about 20. Very, very tasty. Having microwaved the bacon, very, very quick, as well.

Molten Chocolate Cakes

Oh my goodness! Know how quick and easy and good this was? I made mixed it up as an afterthought while my oven fried chicken was heating and my casserole microwaving. We had it in and out of the oven, served up and eaten before I remembered to take an AR photo! Now that just NEVER happens since digital, but it did tonight. Zowie! It's THAT good!

Evin's Indian Apricot Chicken

Sweet & Sour with the flavor of India. This cooks up in no time flat. It is wonderfully zippy and is complimented well with rice. Serve with a salad and plan on making even more next time, because there will be no leftovers tonight!

Black Bean Soft Tacos

This was the basis for supper tonight. I had some rice, though, I needed to use,...especially since my green chillies were actually hot jalapeños, and I needed more than the cheese and avocado to calm things down a bit. BUT this was so good, and I would not have ever thought of putting oregano into a taco. We really liked this...and I tried it from the pan BEFORE adding the rice, and it was good, so even though I tweaked, as needed for tonight, it really is good and quick and easy.

Quick and Almost-Professional Buttercream Icing

On the advice of Red Apple, I did half butter and half shortening. I added and added xxx sugar until things were getting pretty crumbly before adding any of the liquid. I think weather was working against me, and that buttercream roses are parked somewhere on the fringe of my patience's limits, if not my talent's STILL, the taste of this was good even having gone with half shortening. For a tasty buttercream, this is nice. For roses, I'm not the one to ask.

Oven Fried Chicken w/JeanPierre

This was so good and you can tray freeze some extra to use up all the egg and breadcrumbs (or panko and seasoned crackers) before cooking...wrap in foil, refreeze. When ready to use, preheat oven to 400 and cook for 35 to 40 minutes (unwrapped). Great with instant potatoes and steamed asparagus.
