Thanksgiving meals are the best. Food and family/friends...what could be better than that?
My cooking triumphs
I like precision cooking, as far as ingredients goes. That can be a problem, though, when suddenly you need to set another plate. // Update. Still like precision purchases, but am trying to accommodate for "walk-ins".
My cooking tragedies
1.Have you ever put macaroni into a slow cooker soup and let it cook until it becomes mush? Don't. 2.Baked b'day cake for MIL's first visit, and it fell apart. FIL, man of few words, generally, responsed to my embarrassed apologies, "It's been my experience that the worse they look, the better they taste." And he just about ate himself sick to prove his point!

Updated Shepherds Pie
Nothing fancy, but mild and good. We added salt and pepper at the table. I forgot to add the ketchup. Oops. This could be used to finish off some partial packs of frozen veggies. I like the idea on reviewer had of using Bob Evans mashed potatoes, but honestly, my first run through using the small potatoes...even with the peeling and going from cold water to boil, it was not too much trouble. I used my Pampered Chef smasher-thing. Can't remember what they call it; it's not a potato masher, but it worked fine.

Basic Chicken Salad
Great jumping off point, as others have stated, but is good even without tweaking. The lemon and the freshly ground pepper are standouts. This time I added a small chopped apple; and for the dressing some dijon mustard (1/2 tsp.), 1/2 of a drive-thru honey mustard bbq pkt. we had on hand, 1/8 tsp. garlic powder, pinch of onion powder, along with the lemon juice and pepper. Served over a bed of spinach and garnished with dried cranberries, almond slivers, bacons bits.

Simple 'N' Delicious Chocolate Cake
Halved the recipe and baked in a standard loaf pan. In an attempt to lower the fat count, I used applesauce in place of butter...this actually made the end product sweeter than it would otherwise have been, but with this particular cake, that was not a big issue. Many reviewers had commented about this not being a particularly sweet cake, anyway. I let the cake cool and then used small cookie cutters to cut out little cakes. This is really yummy with no frosting as is, or served up with a scoop of vanilla ice cream.
