Campbell's Kitchen Creamy Chicken Enchiladas

Absolutely DELISH!!! I've made this a number of times already, and it's a hit every time. I added half a cup of rinsed and drained black beans to the chicken mixture, and I sprinkle shredded cheese and fresh cilantro on top before serving. The cilantro-black bean taste combo adds to the Mexican flavor. Yum!

Winter Vegetable Hash

I liked this recipe a lot, and will definitely make again. It's easy, and doesn't need any crazy ingredients. However, the provided serving suggestion (6 servings) is completely bogus. I made twice the recipe (2 lbs potatoes, 2 acorn squash, etc,), and it was enough for my husband and me for one dinner and i had all the leftovers for lunch the next day. Mind you, we are both very much in shape, and mind our portions. Other than that little peeve of mine (it applies across most recipes on the site), really yummy, hearty recipe. Love the mushroom-potato-onion combination.

Baked French Toast

I made this for a crew of 10 guys (ages 18-50) and they loved it! I got multiple compliments, and even questions on how I made it - they could tell it was different from regular french toast. I followed advice of the other reviewers in making the bread slices really thick (they were about 1.5") and using less liquid. I used 6 eggs, 2 cups of half-and-half, and no milk. I also used a large Italian loaf, rather than French bread, so the sliced were ginormous and I ended up needing two baking dishes. My favorite part, besides that it's absolutely delicious, is that you can prep it the night before and then stick it in the oven in the morning and not worry about it. When you're making breakfast for such a large crowd, this is a huge bonus!

Kale, Swiss Chard, Chicken, and Feta Salad

Loved this salad! What a great alternative to eating empty lettuce that's all water, whereas kale and chard have so many great vitamins and minerals! I followed the other reviews in cutting the amount of vinegar in half in the dressing, and it came out perfectly.

Quick and Easy Brownies

I made these last night in a craving for chocolate dessert, and they couldn't have been more perfect. Even my husband, who is a bakery snob (courtesy of his mother, who is an amazing baker), said how good they were. Since there are only two of us, I halved the recipe, and we devoured about 2/3 of it in one night. Absolutely delicious and so easy!! Will totally make this again and again and again. Oh, and I also used only 1 cup of flower for the full recipe (or 1/2 cup for the halved recipe), as the other reviews recommended.

Russian Vinaigrette Beet Salad

I love this salad. Delicious and nutritious. If you don't have marinated mushrooms on hand, they can be skipped. The really clutch ingredients are beets, potato, carrots onion, pickles, peas, and oil. But all the other ingredients add their own flavor to the dish. Very good!

Cilantro Lime Grilled Tofu

Great recipe, just made it tonight. I used only about 1/8 cup lime juice (the concentrated kind), and even so the tofu came out a bit too sour. So maybe this recipe calls for 1/4 cup fresh lime juice? Anyway, use the lime juice conservatively. Same goes for cayenne. I love spicy, so I don't mind the kick, but if you aren't a fan, reducing the cayenne to 1/8 tspn might be good. Otherwise, the dish is super flavorful and delish. Very summery.
