Corn Chowder II

Reviewed: Jan. 26, 2009
This was soo good! I added chopped carrots and potatoes and 2 garlic cloves, also did not drain the can of corn for a little extra liquid since the other reviewers said it was too thick. I didn't have a lot of spice on hand so I used salt and a few hearty shakes of Cholula seasoning - Perfect! I will make again and again!

Sweet And Sour Chicken Meatballs

Reviewed: Nov. 9, 2008
This was so good! I was a little wary to cook ground meat in liquid, so I cooked the meatballs in the oven for about 10 minutes, then let them simmer for 30 in the liquid. They turned out perfect. I also had the same trouble as someone else with the rice - it definitely takes more than 5 minutes. I used brown instant rice and it took nearly 20 minutes. It took quite a while to cook everything, but it was well worth the wait!

Juicy Roasted Chicken

Reviewed: Oct. 19, 2008
I added garlic powder and season salt to the outside, otherwise followed the recipe as written. It was perfectly moist, the only drawback is that the seasoning wasn't fabulous. This would be the perfect recipe - it only needs a good punch of seasonings! Next time I will make a spice rub and let it marinate for several hours beforehand.

Cantina Pinto Beans

Reviewed: Jun. 25, 2008
This recipe gets 5 stars for taste/flavor, but I gave it 4 because it was more of a soup consistency than beans. I did use can beans which may have made a difference. After simmering for 30 minutes, I added 1/2 can refried beans to thicken it, but it was still a little to thin for me. It's also very spicy!! Very good!

Grilled Asparagus with Roasted Garlic Toast and Balsamic Vinaigrette

Reviewed: May 4, 2008
I've made this several times, without the toast, and it is very good! The only problem is fighting everyone off from eating them before they hit the grill!

Broiled Tilapia Parmesan

Reviewed: Apr. 8, 2008
First off, I am not in anyway a seafood eater. I want to be, but I can't get past the fishiness. This recipe is perfect! I actually loved it, and made it exactly as written. It is rare you find a recipe that doesn't need tweaking, this is the one! I will make this often.

Cheesy Zucchini Casserole I

Reviewed: Oct. 16, 2007
I made this recipe as is, and it was excellent! I cut down on the cooking time because I was hungry and didn't want to wait anymore, so it was in the oven a total of 45 minutes, turned out perfect.

Best Ever Meatloaf I

Reviewed: Jun. 12, 2007
This is a good "base" recipe. If you prefer bland food, keep the recipe as is. I like spice, so I needed to add a lot. I used salsa instead of tomato juice, and added quite a bit of salt free all purpose seasoning, and garlic and herb seasoning. Also took suggestions of other people and added equal parts ketchup and brown sugar to the top, towards the end of cooking.

To Die For Blueberry Muffins

Reviewed: Jun. 10, 2007
I had high expectations for these muffins, with all the 5 star ratings. I was disappointed with the flavor. They were moist, took about 12 minutes to bake, I just didn't love them.
