About this Cook
We sold everything 3 years ago and moved to a small town 2 1/2 hours away. My sons have flourished in their new environment. My husband has started a new business, so I have gone back to college to do my Bookkeeping Certificate to take over the accounting part of his business. I love traveling, baking and trying new recipes.

Peppermint Patty Brownies
I used the Best Brownie recipe in a 9x9 pan, 26 minutes baking time was perfect. I did not like the texture of the peppermint patties when it cooled as they became chewy. I topped with a ganache. The flavour was good but the texture was a deal breaker.

Greek Farro Salad
My family loved this salad and declared I can make this anytime! I only used 2 tbsps lemon juice and 2 tsps Greek seasoning. I omitted the tomato, added a carrot and a stalk of celery finely diced, used the tops of 2 green onions for the red onion. I used vegetable broth for simmering, it took 45 minutes for the farro to burst open. Thanks for a great recipe. The second time I made the salad I used PC Blue Menu Italian Farro which only took 20 minutes to burst open, the box is 1 1/2 cups of farro as well which makes it easy for measuring too.
