Chef John's Chicken Kiev

This was outstanding! Not a week night dish for sure and worth the dirty dishes and effort. My mortar and pester is pretty small, so I started it there and finished in my mini food processor for the butter, garlic, and parsley mixture. I was kind of worried that the chicken wouldn't hold together, but it did! The only problem I had was different sized breasts. I cooked two not four. The smaller breast was perfectly cooked in 15 minutes. The larger one wasn't done all the way, so go with about 20 minutes in the oven. Served with mashed potatoes and green beans. I will definitely make this again and again.

Cherry Bomb Chicken

I, too, was worried about the spice level. No worries at all, and a delicious recipe! I used a ziploc bag to brine. The chicken was super moist and not too spicy at all. I bought the thai chili sauce, which has a good kick for sure, and took his advice on a couple of tablespoons...not too much. DELICIOUS!

Pineapple Punch Drink

I made this for our office Christmas party and it was really good. I made half the recipe (one can of pineapple juice, about one little packet of the raspberry ice Crystal Light, and one liter bottle of soda). I used club soda instead of sugary soda. I thought the lemon-lime soda would make it too sweet. If you're making it for kids then go with the sweet soda. I'm making it again for Xmas Eve and will be spiking it with vodka or rum.

Ten Minute Enchilada Sauce

This is a good basic and quick sauce. I took others advice and doubled the spices, used less than half of the brown sugar, and added a little cocoa powder to it. Other than that, I didn't change anything. I usually make my own chili powder, but didn't this time. I made the mistake of buying store bought. Would have been better with my own. I reccomend Alton Brown's chili powder recipe. It is so good and you will never buy chili powder again.

Roasted Parmesan Rosemary Potatoes

I've made these twice now and love this. The first time I used rosemary and the second I used parsley. I also decided to microplane, or grate garlic, and whisk that with the olive oil. I grated the cheese separately and then combined them in one bowl with salt & pepper with the potatoes. That is the way to go with this recipe! If you use rosemary, toss the potatoes at the beginning with it. If you are using a more delicate herb, add the herb much later in the cooking process.

Meatball Nirvana

Great meatball recipe. I've done this twice now; once with ground meat and once with a combo of ground chicken and turkey. Both were outstanding. I usually make a milder marinara sauce and these meatballs had just enough spice in them to make them hot, but not too hot. The second time I also added a little bit (about 1/2 tsp) of crushed fennel. Good move on my part.

Greek Pasta Salad with Roasted Vegetables and Feta

This is now my favorite salad! I used only one red bell pepper and used zucchini instead of squash. I didn't use as much sun-dried tomatoes as it called for and added fresh tomatoes to it. I used spinach instead of arugula and about half the amount of pasta. It is a great salad to be creative with and use up those veggies. It was best warm but good cold too.

Eggplant Rollatini

I've made this twice and really enjoy it. I made a lighter version the second time though. Instead of using a whole egg and frying it, I used a couple of eggwhites mixed with a little water. I dipped that in bread brumbs and put them under the broiler about 5 minutes per side on a baking sheet sprayed with cooking spray. It takes no extra time really. I also used part skim ricotta.

Pork and Red Chile Stir-Fry

This was really good, very simple, and quick. I used it as a base recipe though. I had a couple of pork chops in the freezer. I used left over fresh broccoli, left over fresh mushrooms, bell pepper, and onions. I also used ground ginger instead of fresh since it was what I had on-hand. I will use this again for sure.

Basil Shrimp

I used this for some frozen Mahi Mahi I had in the freezer. It was really good with fish too. I would go with the other suggestions and scale back on the mustard. I like a mustard tang but the amount here is too over-powering. I will use this one again though.

Baked Teriyaki Chicken

I'm giving 3 stars because I thought it was on the salty side and a little too sweet. If I decide to make it again I will cut the soy sauce and sugar in half or maybe use brown sugar. Another thing is the clean-up. HORRENDOUS!

Italian Sausage, Peppers, and Onions
