MMMMM... Brownies

These brownies came out moist and delicious! I used whole what flour and half the sugar, so they weren't too sweet. I also put an icing on top made from butter, milk, confectioners sugar, vanilla, and cocoa.

Garlic Butter

I modified this by using twice the garlic, and garlic powder instead of garlic salt. I found it was salty enough, because I had used salted butter. The garlic spread was used on french bread, and tasted amazing!!

Pina Colada III

Chocolate Chip Banana Muffins

These muffins were very moist and delicious! My changes were: 3/4 cup vanilla yogurt, 2 cups bananas, 1/4 cup olive oil, and no sugar! I also sprinkled some cinnamon on top and they turned out amazing - definitely sweet enough.

Elegant Mushroom Soup

This soup is AMAZING! I used skim milk and it was still nice and creamy. Since my son was eating it, I put it all in the blender, so it was a creamy soup. Very good, will definitely make it again!

One Bowl Chocolate Cake III

I cut this recipe in half, and made 12 cupcakes. The only modifications I made were using half whole wheat flour, olive oil, and skim milk. These cupcakes were AMAZING! Moist, light, and you couldn't taste the whole wheat at all, so it was a nice way to make them a bit healthier.

Creamy Carrot Soup

This soup was AMAZING! I doubled the recipe and followed the other suggestions: I used 3 cups stock instead of 4, and light coconut milk instead of cream. I also didn't have vegetable stock, so used chicken instead, tripled the ginger, didn't have dill, and left some vegetables on the side before pureeing, to give the soup some texture. With all those changes it was still great, and next time I will make sure I have dill on hand.

Broccoli Cheese Soup V

This soup was fantastic! I wanted to make it a bit healthier, so I doubled the broccoli and cut the cheese in half. It was still very creamy and cheesy. Next time, I'm going to try it with skim milk and an extra onion. Thanks!

Onions Baked with Rosemary and Cream

Instead of cooking the onions in the oven for an hour, I boiled them for 15 minutes. Then I added all of the ingredients at one time. My sauce still thickened up and everything was perfect. It's a great recipe for anyone who loves onions or who is watching their calorie intake!
