Chicken Taquitos
I haven't made this recipe yet (I have my own that I use) but wanted to give a hint on getting the tortillas flexible so they don't break when you fill them. If you are deep frying them anyway, before you fill the tortillas, dip them into the hot oil (one at a time) for about 5 SECONDS -- just until they bubble a tiny bit (you can flip them one time during this process). Then lay them out on paper towels to drain the oil from them. After you do this, the tortillas get nice and flexible and won't break when you fill them.

Asparagus Appetizers
I made these for Easter 2006 and what a hit they were!! I only used 2 cubes of butter and basted them instead of dipping them into the butter. I also cut them into 3rds instead of halves for more bite sized appetizers. Luckily I brought the recipe with me because I handed out photocopies to 6 people. Very easy and delicious.
