Connie's Zucchini "Crab" Cakes

Although I made changes I think this was excellent. I've made mock crab cakes before and they are really wet. I did shed, salt and drain mine. I called them more of a "summer pancake" I didn't have oldbay which gives it the "crab" taste but I had fresh basil, and cilantro and I chopped those up and put them in there. I fried some and baked some at 400 for 12min, flip and 12min more. Little mayo, and a tomatoe on top! Yum. I make these like once a week!

Tasty Lentil Tacos

These were awesome!! I just used water because I didn't the any veggie both and just used a taco spice packet. These were a hit! My 7 yr old son ate 3 and is requesting them again for dinner tonight.

Stuffed Acorn Squash

Was pretty good. I tried cheating a bit and didn't quite get the squash cooked all the way. I just used stove top and cooked that. Added the butter, brown sugar and some raisins. This is my thanksgiving dinner since I do not eat meat. I would make it again.

Soft Peanut Butter Cookies

it's a cookie they are alwasy good! I used natural pb but you couldn't tell the diffrence. I popped them in the freezer to hide them but it didn't work. Really good spead with nutella on top!!!

Jeanie's Falafel

Yum, this was great. I added an egg just to be safe. I'm sure it would have been fine without it and just adding water. I baked mine jsut cause I didn't want a smelly house. 400 for 20mins flipped halfway and broiled for a few mins as another person suggested. My 7yr loved them too. But then again he eats anything :)

Spinach Lasagna III

Really good! I used one package baby spinach, about 4 cups and sauteed with the onion. I didn't use mushroom cause my son doesn't like them. I used about 5 cups sauce and didn't boil my noodles first. Came out great! I made this for Christmas and my meat eatting family were concenred but all I received was compliments! Thanks

Pecan Tassies

Yummy! Took a while to make the cup. I did as another suggested and took a wine cork, wrapped it in plastic wrap and used that to start. It's a long process so not sure how often I would make them but they are a great treat.

Peanut Butter Cup Cookies

Yummy! I'm not usually a fan of the ones with the Hershey Kiss but these are soo good. I used natural peanut butter and added just a bit more sugar to make up for the sweetness. I wasn't sure how they would turn out with the change but you couldn't tell. A new Christmas favorite!!

Candy Cane Cookies III

These were SOOOOOO good and fun to make with the kids. I used almond instead of the peppermint extract. next time I'll have to crush the candies more because they didn't stick very well. I ate four while baking. Yum!

Homemade Black Bean Veggie Burgers

Good stuff. I used garlic powder instead of fresh only because I was too lazy to pull out my processor and then clean in :) Pan fried in a bit of olive oil.

Imitation Meatloaf

I was really hoping I liked this, but I didn't. I think it has potential, but because it takes so long to make I don't think I would make this again. It did look like meat, but it was dry and after a few bites it wasn't good. :(

Homesteader Cornbread

It hard to give an actual review since I made some changes according to other reviewers. I switched the corn meal and flour amounts and slightly lowered the sugar. The taste was great, it was really dense however and I think that's from the changes. However, it looked really heavy and dry so not alot of people ate it, but it WAS good. However I think I will stick to my normal cornbread recipe

Banana Streusel Muffins

I used more mashed banana (because I had a ton) and 1/2 c sourcream. Double the topping and I got about 18 muffins. Very good, love the topping.
