Rich and Creamy Tomato Basil Soup

I loved this soup. My SO said it tasted like liquified manicotti, but still ate two bowls. :-) I added somewhere between a teaspoon and a tablespoon of sugar to the tomatoes while they cooked. It was very easy to make and tasted like it was from a fancy restaurant.

Feta Cheese Turkey Burgers

I love this recipe. I have made these burgers twice and both times, they were great and not dry at all! The only change I make is to use about 1 TBSP of Greek seasoning (onion, garlic, oregano, mint) instead of plain oregano. Thanks for a great meal!

Beef Barley Vegetable Soup

This is a good soup. I had absolutely no idea how to cook the roast, since I rarely cook beef. I put it in the crock pot, covered it with water, and cooked it for about 5 hours adding the barley in the last 45 minutes or so. The meat came out extremely tender and pretty much fell apart. The only hard part was getting the barley out of the water I cooked the roast in. I omitted the celery, as I don't care for it. I accidentally got pureed tomatoes instead of stewed, and I don't think it made a big difference. I also added a packet of Lipton Onion Soup mix for extra flavor. This soup froze and reheated well.

Annie's Fruit Salsa and Cinnamon Chips

Absolutely fantastic. I've made this for two appetizer parties and it went over well at both. I left out the fruit preserves the second time because it's sweet enough without it, and I didn't really like the taste of the preserves I used. I put a spoonful of extra fruit into a glass of wine for a makeshift Sangria too. YUM!

Feta Cheese Foldovers

Yummy! I cut each sheet of puff pastry in the package into 9 squares, making 18 squares/servings total. I used tomato basil feta in half, and garlic herb feta in the other half. I folded one flavor into triangles and the other into rectangles. It's easier to seal if you put egg wash on the edge as a "glue" instead of water. I've also made these with cheddar cheese and broccoli instead of feta and green onions when we ate with a family that hated feta.

California Sherry Chicken

Hawaiian Chicken Salad

Yummy! I love this recipe, but I think it's one of those love-hate things. It didn't seem like anybody who tasted it thought it was so-so. They either loved it, or couldn't eat another bite.

Yummy Honey Chicken Kabobs

Yummy! I'd probably put the chicken on a separate skewer from the veggies though, because the chicken took longer to cook than the veggies and the veggies ended up burned on the edges. I used red onion, cherry tomatoes, and red and green bell peppers.

Broiled Tilapia Parmesan

Quite Tasty! I HATE fish but bought some tilapia because I know it's good for you. This recipe was just what I needed! I cut the recipe to 2 servings and used most of the sauce on one tilapia filet. I used canned parmesan (sprinkle cheese) and bottled lemon juice because that's what I had on hand. I also subbed garlic powder for the celery salt because I don't like celery and it didn't need any additional salt. I served it with couscous and a green salad. Thanks for helping me eat quick and healthy! EDIT: 01/28/2009: This is one of my most frequently used recipes from this site. I have done all kinds of variations on this recipe. Our fave so far was to add a dash or two of cayenne for kick. Thanks again for a great recipe!

Oat Applesauce Muffins

For a healthy muffin, these are pretty darn tasty! I added the following based on other reviews: 1 tsp vanilla, 2 tsp cinnamon, and 1 diced apple. I used skim milk instead of buttermilk because that's what I had on hand. I also used only egg whites. I baked at 375 for about 20 minutes and lightly dusted the tops with cinnamon sugar. Very tasty!

Middle Eastern Turkey Dogs

YUMMY! I made these for dinner tonight and I LOVED them! I served them in a whole wheat pita with lettuce, tomato, feta cheese, and homemade lowfat tzatziki sauce. I only used about 3/4 teaspoon of each spice and subbed dried cilantro for the ground coriander because I didn't have coriander on hand. Absolutely fabulous, and healthy to boot! I'd make this recipe again in a heartbeat! Thanks for sharing!

Guacamole

Delicious! Left out the cayenne because I didn't have any and it was still fabulous! Edit 06/25/2008: I have made this guacamole at least 4 times for various parties and it is always the first thing gone. I usually dice up the veggies up to a day early and let them marinate with the cilantro, spices, and lime juice. I just add and mash the avocado right before serving. I LOVE this recipe!

Sangria! Sangria!

We made this for a housewarming party to serve with margaritas and chicken fajitas. Went over very well. We made it the night before so the fruit could release all of its flavor into the liquid. I think we ended up tripling the recipe and had to make it in empty milk jugs for storage. Thanks for the recipe!

Chicken Nachos

These were delicious. We used leftover fajita chicken (using Chicken Fajita Marinade recipe from this site). We added jalapenos, sour cream, salsa, and guacamole to the top. They were gobbled up in an instant! Thanks!

Salisbury Steak

I have made this recipe a couple of times. The first time, I made it exactly as the recipe is written. We enjoyed it, but didn't think ketchup belonged in the sauce. The next time I made it, I simply omitted the ketchup and we like it much better. Will continue to make this recipe without the ketchup from now on. Thanks!

I've made this recipe many times and love it. Sometimes I add dried cranberries to it too, for a different flavor. I used frozen french cut green beans. I also prefer to just use kosher salt instead of the seasoned salt.

Golden Sweet Cornbread

I made this last night to go with chili and it was great. I made muffins and cooked them at 400 for about 15 minutes in a dark, non-stick muffin pan. The muffins were moist with just the right amount of sweetness. Next time, I'd probably use just a little less baking powder, since I like it a tiny bit more dense. I also added a little bit of extra oil based on other reviews.
