Mexican Salad

We grilled fresh corn and cut off the kernals. 2 tbls. olive oil (as another review suggested) instead of 1/4 c. We added avocado right before we served it. This dish was a hit! We've served it as both a salsa and a side dish.

Chicken Chimichangas with Green Sauce

Wonderful recipe! Great tasting and easy to make. I brushed the tortillas with melted butter and baked in the oven for about 10 minutes on 500 (I got the idea from another Chimichanga recipe) instead of frying, and they were great.

Shrimp and Crab Enchiladas

Muy delicioso! Whenever we serve this, our friends ask for the recipe. We modified it a bit by increasing the following; 16 ounces of cheese, 3 cans of crab meat, 1 1/2 lbs. of shrimp, and adding: 1/2 can green chiles, 1 small can chopped black olives. We mix the 1/2 of the cheese along with the crab, shrimp, chiles and olives for the filling. Wonderful tasting!!

Fresh Spinach and Tarragon Salad

This is one of the best salad recipes I've made from this web-site. The combination of flavors is great, and the salad dressing is awesome. My husband, who does not like eggs in his salad, couldn't get enough. The only change I made was I used 1/4 cup of olive oil instead of 1/2 cup of vegetable oil, and the dressing was not too oily at all. Wonderful tasting salad!!

Easy Olive Martini Chicken

I love martinis and my husband loves green olives, so we enjoyed this dish very much. Because we both like green olives so much, I tripled the amount of green olives (but if you're not a huge green olive fan, tripling it may be a bit much). Also, there didn't seem to be a lot of sauce, and I was worried about the chicken getting dry, so I double the wet ingredients. It turned out great!

Antipasto Pasta Salad

Delicious pasta salad. Hearty and makes quite a bit. Good the next day, too. We used grape tomatoes instead of chopping up tomatoes and orange bell pepper instead of green bell pepper. We recommend that the dressing is added at least an hour before you serve it.
