Mom's Paprika Chicken with Potatoes

This is tasty and easy. Suggested alterations: I used fingerling potatoes. these are the most delicious little potatoes. They have the perfect skin to starch ratio and have a very nice flavor; buttery and earthy. Also, I like to use the whole carrots instead of the baby ones. They aren't that much more work, and they have a stronger flavor. The choice of paprika can really make this dish from good to great! I spnkled hungarian half-sharp and smoked spanish paprika. The half-sharp gave a fun yet appropriate bit of spice Yum!

Spicy Vegan Potato Curry

Made this tonight and it was a huge hit with the hubs. This must be served with rice or naan as it is a very complex and spicy dish. I love how healthy it is-I used light coconut oil, but this dish does not feel like it's lacking. Be mindful as to how fresh and potent your spices are and moderate as needed.

Roasted and Curried Butternut Squash Soup

Yummy! And this is one of the healthier of the Butternut soups out there-which is why I chose to cook this one. I also roasted an apple with the other veggies and added 1/2tsp of powdered ginger (no fresh on hand). I used Greek yogurt (it's much more creamy) and a dollop of 1/2&1/2-which really wasn't necessary.

Hearty Lentil Soup II

I love Lentil soup! This was a bit lacking in flavor for me, so I threw in some Curry, Cardamon pods and cayenne pepper. I also used Rotel tomatoes instead of just generic diced tomatoes which added a nice bit of flair. No need to be stingy on the veggies-the more the merrier :-) This was my first attempt at lentil soup and found this recipe more like good suggestions rather than instructions. But that is the fun of cooking isn't it? :-) Lentil stew will be a staple dinner in my house.

Honey Baked Chicken II

I just found this recipe last week and have already made it twice! This is one of very few recipes I've NOT tweaked. This is wonderful, unique and incredibly easy. Reviews from all the fed mouths were positive and raving. My MotherInLaw even liked it saying she has never liked Honey Baked Chicken. I've used dijon mustard vs. straight yellow. Threw in some Smoked Spanish Paprika the second time around to deepen the flavor-not that it really needed anything. This is both a crowd pleaser and chef pleaser. Thank you for this!

Garlic Parmesan Orange Roughy

This is wonderfully easy, FAST and fool-proof! This recipe can be used on any light flavored fish very well. I actually broiled some bay scallops and sprinkled them on top of the fish for an extra dimension of sea-food :-) Orange Roughy is a delicious fish with a light and buttery flavor. The fish guy at Wild Oats said that their population is weak which is why Wild Oats doesn't sell them anymore. He recommended Cod as substitute. Whenever I can get some Orange Roughy, I love to use this recipe, but Cod is good as well.

Christmas Breakfast Sausage Casserole

First thing my husband said on November 1st of this year, "It's almost time for that breakfast casserole!" So this is pretty much one of the best things about Christmas dining. I do make sure to drain the sausage to avoid the casserole becoming too greasy.

Banana Chocolate Chip Cake

This was a tremendously good recipe! I doubled this and put it in a 9x13 and thought it was a perfect amount for that size dish. It's a nice variation on Banana bread. I recommend a few more chocolate chips. I used more bananas than suggested by the recipe (I had about five pounds I needed to use-so this recipe was on my banana adventure path). I also added 1/2 a cup of brown sugar. I think I will be making this one again.

Surprise Banana Cake

The Hubbs, my favorite food critic, said that not only must I bake it again, but I could give it out for Christmas gifts and could even sell loaves. I had about five pounds of bananas I needed to do something with, so this was one of my banana experiments-and a wildly successful one at that! I added an extra banana (because I certainly had plenty to spare) and 1/3 of a cup of brown sugar. I used LIGHT Smart Balance and used a bundt pan. Not only was this extremely easy, but I was very pleased with the results. Surprisingly I didn't "tweak" the recipe anymore than that! I'm notorious for following a recipe as a suggestion rather than direction. I think this should be a recipe every cook should have in her repitoire! This will definitely be repeated in my kitchen.

Belle and Chron's Spinach and Mushroom Quiche

This got rave reviews from the Hubbs who thought he didn't like Quiche! I used baby portobellos which added their unique flavor. I kinda doubled this because I needed to use up all the mushrooms I had on hand. I didn't have light cream, but Half and Half did the trick. I did cook the mushrooms, onion and spinach before putting it in the mixture. I suggest using more spinach. I used a whole 10oz bag. I put this in a 9x13 so it wasn't very pretty, but one that will definitely be cooked again. I toasted the pie crust a little bit before pouring the mixture in, just to make sure I didn't get the soggy effect. Also, after steaming the spinach and cooking the mushrooms, there was some liquid after they cooled (didn't want to scramble my eggs putting hot veggies in). I made sure to NOT put this liquid in the mixture since I read in a few other reviews that their Quiche ended up soggy. Not so with this one. Otherwise, fairly fool-proof and basic and good to add a little variety to the week-night menus.

The chicken should probably be cut into strips or a bit smaller so as to increase the surface area to acquire more seasoning. Otherwise a tasty, easy and delicious meal.

Campbell's® Easy Chicken and Cheese Enchiladas

EASY, FOOL PROOF and a winner with the hubby. No need to cook your own chicken, just used the canned or packaged variety! Thank goodness for easy to prepare foods! I will be making this one again. Oh, and used reduced fat everything with good luck.

Spanish Green Beans and Tomatoes

This is very good and refreshing. I make this in the summertime when tomatoes are more prevalent. My aunt-in-law has a giant veggie garden so I am always looking for new recipes for fresh veggies.

Fried Pork Chop

This was great! I made too much, froze it (just to see if it would keep/reheat well) and it did!!!! Just as good the second time around! I defrosted it in the microwave, then crisped it up in the oven. Will be doing this one again.

Lamb Chops with Balsamic Reduction

This was delicious. A very nice way to accent the natural flavor of the lamb. It tastes gourmet without being too fussy. It also uses ingredients readily available in a well stocked kitchen. Well, except for the lamb. I only buy that when it has been reduced. I have champagne taste on a beer budget! :-)

Cajun Chicken Pasta

Yum Yum this one was a winner! Delicious. The heavy cream was a bit more indulgent then we should get used to so I look forward to trying a few of the lower-fat versions suggested in other ratings. I added red pepper flakes to the sauce which pleased the waiting tastebuds. We shall dine again on this in the future.

Chicken Tortilla Soup V

Muey Bueno! This is a very good foundational recipe. You can't really mess it up and it is quite easy. I used fresh salsa from the deli department, added rinsed canned black beans. The recipe was easily doubled. The hubby requested "plenty of chicken" and boy did he get it. We will definitely be eating this one again.

Delicious Ham and Potato Soup

You can't mess this one up. I "eyeballed" all the measurements and ended up with a large serving of the soup. I will next time add more celery and onion. I also mashed some of the potatoes up with a hand masher to give a thicker consistency. I will definitely be making this one again.
