Absolutely delicious! The vegetables and sauce really complimented the pork well. My husband said it was worthy of a fine restaurant. I'll be adding this to my menu the next time my mother-in-law comes over!

Very good! I didn't have the fresh tomatoes, so I subbed a 28 oz can of petite diced tomatoes (1lb) and it turned out wonderful! This is delicious!

Tuna Noodle Casserole II

Wow! This is wonderful! Definitely comfort food for us! I used the Healthy Request version of the mushroom soup, used the whole 12 oz can of evaporated milk (since it was so thick), used linguine noodles instead of egg noodles, sauteed a small onion and a stick of celery in a tablespoon of butter, then added frozen corn and spinache, and cut the frozen peas down to about 1 cup. I used Roasted Vegetable Ritz crackers for the topping since I didn't have bread crumbs. This was soooo good! My 4-year old daughter was licking the bowl!

Chocolate Chocolate Chip Cookies I

Excellent cookies! I cut the butter to 1-1/2 sticks and it turned out great! I also added 1/2 cup white chocolate chips to make them triple chocolate chip cookies. Best cookies ever!

Golden Crescent Rolls

Wonderful rolls! I made them for Thanksgiving and everyone loved them. I shaped half of the dough into the crescent rolls and the other half I rolled out, coated with softened butter, then sprinkled liberally with a brown sugar, cinnamon and chopped walnuts mixture. I rolled them up long ways and cut into 9 cinnamon rolls. I put the rolls into an 8x8 glass pan sprayed with nonstick cooking spray and covered them with plastic wrap. I put them in the fridge overnight. The next morning I took them out and let them come to room temperature, rise a while then baked them in a 350 degree oven for 20 minutes. They were heavenly!

Blueberry Pumpkin Muffins

Ice Cream Cake Roll

The cake itself was very yummy and easy to make. I didn't have any problems with the batter and it baked in 10 minutes in the oven. One bit of advice is to use liberal amounts of powdered sugar on the dish towel you roll it up in and on the outside of the cake. I used Edy's strawberry ice cream in the middle and it was divine. I did make the chocolate sauce and it did not turn out well. It was very runny and never thickened up at all. I tried to add some cornstarch to it to thicken it up, but it didn't work either. It tasted okay, but the texture was watery. Not good with this cake because it made it soggy. I would make the cake again, but buy a jar of hot fudge sauce for next time.

Creamy Blueberry Pie

Super easy and so yummy. I served each slice with vanilla ice cream and it was great. I debated about whether to use all the crumb topping on the pie since it seemed like a lot, but I'm glad I did. It wasn't crumbly at all and make a nice top crust. My four year old got the pie out of the fridge on her own and ate 1/3 of the pie right out of the pie plate when I wasn't paying attention! I'm already planning on making it again!

Fluffy Seven-Minute Frosting

Excellent! Super easy and so yummy. Just the right about of sweetness. I didn't have a thermometer, so I used a glass of ice cold water to test when the sugar/water syrup was ready. Frosting set up nicely on the chocolate cake and tasted heavenly. Will definitely make again.

Coconut Date Balls

Very, very sweet! Also very messy to roll into balls. If you cook the mixture on high heat, you'll scramble the eggs, so make sure you watch it and stir constantly. Very tasty treat, especially with toasted pecans.

Cranberry Pumpkin Muffins

Outstanding recipe! Some of the best muffins I've ever made. Would be even better with some toasted nuts added. I subbed applesauce and yogurt for most of the oil and used 1 cup all purpose flour, 1 cup whole wheat flour and 1/4 cup wheat germ instead of all white flour to bulk up the nutritional content. I only got 18 muffins out of it. Definitely a keeper!

Buttermilk Coffee Cake

This was a good coffee cake. It was really easy to make since it was pretty much in one bowl. The cake part was kinda of carmel flavored because of the brown sugar in the cake. The topping was yummy, but a little too sweet for me. Next time, I'll use less on the cake rather than use it all. I liked the spices in the cake.

Strawberry Spinach Salad I

Wow! What a yummy salad! I toasted the almonds in a dry skillet for a few minutes and used balsamic vineagar instead of white vinegar. I couldn't stop eating this salad! Love it and will definitely make it again!
