Zesty Chicken Meatloaf

This was wonderful! After taking it out of the oven, it appeared so dry and drab. But after throwing on some shredded cheddar cheese, warming it back up and serving it with a dollop of sour cream, it was great! It has a different texture than normal meatloaf. I used ground turkey and used the Kitchen Aid mixer to mix the ingredients. It was easy to make, easy to mix and easy to slice for a nice presentation. My husband even enjoyed it and he's not a meatloaf lover. I would definately make it again and wouldn't change a thing.

Better Slow Cooker Robust Chicken

This was good. I didn't use the olives and used fresh mushrooms, instead of canned. The red wine is what made this dish delicious. We almost felt we were eating at a fancy bistro. Nice dish, pretty presentation. Would definately make it again.

Brown Sugar Meatloaf

The meatloaf, itself, was good, however the brown sugar was just a tad too sweet for meatloaf. Both my husband I felt this was not a do-over.

Enchilada Casserole III

This should really be called a Burrito Casserole since Enchiladas rarely have refried beans in them. We felt the beans added an undo heaviness to the recipe. I baked the tortillas beforehand and still felt they turned out too mushy. Will keep searching for a better recipe.

Royal Coconut Cookies

Another 70's child checking in. These are the tastes of my childhood! My grandmother rarely bakes these days and now it's time for me to relive those days of yore. These cookies are WONDERFUL! Served up with a cup of coffee or a spot of tea, these will be a hit at any table, even if it is a table for one. Yummy!

Wild Rice Chicken Bake

I loved this, my husband not so much. He was looking forward to traditional chicken and rice casserole. I loved this version, though. I cooked the chicken with curry seasoning in addition to the salt, pepper and garlic. It was absolutely delicious! My husband is a party-pooper. More for me! :)

Slow Cooker Chicken Taco Soup

This soup was fantastic! My husband, who normally loathes leftovers, not only devoured them the next day, but had two more helpings! The chicken was so tender and this soup was restaurant style. Coupled with the suggested sour cream and blue corn chips, the result was an A plus!

Frozen Cranberry Salad

This might very well replace my love for Ben and Jerry's ice cream. Even my husband, who isn't a huge lover of sweets, gave this the two-thumbs up. Delicious as is.

Creamed Turkey with Bow Ties
