Easy Ice Cream Cake

Tomato and Mozzarella Bites

I wasn't sure what to expect when I made these, but they are wonderful! I made them for a cook-out over the weekend and they were gone in no time. I used cherry tomatoes, cut in half, fresh basil, and marinated mozzarella balls. The marinated cheese was delicious. I place them on skewers and salt and peppered them. I then took the marinade from the mozzarella and added some balsamic vinegar and used that for dipping. A perfect appetizer for a hot day.

Chicken and Bacon Shish Kabobs

I did a search yesterday to find something to cook on the grill other than the usual burgers, chicken or brats. I am so glad that I found this recipe. I doubled the marinade and added green peppers and sweet onions. I put everything in a large ziploc and let it sit in the fridge for about 3 hours. I used regular sliced bacon and it came out crisp and delicious. The chicken was very moist and tender too. I got lots of compliments on this! I served them with parsley buttered red potatoes. Absolutely delicious!!

Jalapeno Popper Spread

Took this to a party and came back with half of it. Not sure why because it really is very good. I followed the recipe except for adding 1/2 cup panko bread crumbs mixed with the parmesan on top. Gave it more of a deep fried taste.

Carrot Cake III

This cake is fabulous. I made it for Easter and everyone loved it. I used half white, half brown sugar as many others suggested. I also used only 3 cups of confectioners sugar for the frosting. I think 4 cups would have been way too sweet. This is the only carrot cake recipe I'll use from now on.

Mexican Rice II

This is very good. I usually make packaged Mexican Rice, but this is so much better. I used Taco Seasoning I instead of the cumin and salt. I served this with Salsa Chicken from this site and it made a fantastic meal.

Salsa Chicken

Venison Steak with Peppers and Onions

My whole family thought this was very good. I used about 2 lbs. of venison tenderloin, cabernet instead of sherry and I added sliced fresh mushrooms with the other vegetables. I wanted more gravy so I used a total of 32oz. of beef broth which I thickened with cornstarch. The meat was fork tender and delicious. I served this over buttered egg noodles with fresh baked bread to sop up the gravy. Will definately make this a lot.

Beef Stroganoff III

This was incredible!! I used Venison Tenderloin which I marinated in Cabernet for about an hour. I made it pretty much according to directions except I used fresh mushrooms, about a tsp of minced garlic, and only about 1/4 cup of sour cream. I served it over egg noodles with green beans sauteed with bacon and garlic and fresh baked bread. This was exactly what I was looking for and will make many times again.

Restaurant Style Chicken Nachos

I made these for last night's super bowl and they were great!! I added taco seasoning to he chicken as I cooked it and added Jalapenos and Black Olives on the topwith the tomatos and cheese. Tasted just like the nachos I get at a local sports bar.

Grilled Shrimp Scampi

This was excellent! I served it on top of Linguini mixed with melted butter, fresh parsley, oregano, lemon juice and Parmesan cheese. It was the perfect meal for a hot evening.
