Carrot Cake III

I have been making this recipe for years. People rave over how delicious it is. A few notes: If the cake will be frosted, I reduce the sugar to 1 cup. Also I reduce the oil to 1 cup. I find that 1 1/4 makes the cake almost wet. Lastly, sometimes the cake makes my tongue feel weird. Possibly the baking powder is too much.

Banana Crumb Muffins

WOW!!!!!! These are so delicious! Like most people I made a few changes. Oil instead of butter. 1/2 cup WW flour/ 1 cup AP. I only had 2 bananas, so I added one grated apple.

German Apple Cake I

Yummy!!!! As with so many reviews, I cut the sugar back to 1 1/2 cups. That was just nice. Dusted with powdered sugar, it is lovely!

Fluffy Pancakes

So light and fluffy!!!!!! We loved them. I did use half whole wheat flour and oil instead of butter. They were wonderful! For my family of 5, I had to double the recipe.

Mom's Zucchini Bread

Delicious!!!!! I cut the sugar to 1 3/4 cups and it was still sweet enough. For health, I replace 1 cup of the AP flour with whole wheat flour. And I used carrots instead of zucchini because it was what I had. Even with my changes it was a great recipe! Will use it again.

Magic Cookie Bars II

Everyone at my party LOVED these!!!! I had to change it a bit. Only used 1/4 cup butter mixed with the crumbs. Used pecans. And used milk chocolate mini chips in place of the butterscotch chips. Cut into one inch squares. YUMMY!

It came together SO quickly!!! I didn't have any cheese, so I rubbed on smashed garlic, salt, olive oil. Also, I did proof my yeast. Yummy!

Oatmeal Chip Cookies

Love these!!! I didn't have enough butter so I had add about 3 tablespoons of shortning, but the taste and texture was still awesome. I got distracted with my kids and accidently cooked them for 13 mintues...they were a little over done. Next time I will cook them for 11 minutes as stated.

Quick and Easy Pizza Crust

I thought this was great as written. One change was I used instand yeast because that is what I have. My only problem is that it wasn't so chewy like dominos. Oh well...it was delicous!

Mediterranean Lemon Chicken

These were a bit bland. It is probably a good base recipe, but by itself they are not impressive. Perhaps more sugar and vanilla would be nice.

Sloppy Sams

Just made this recipe. I used half yellow and half black lentils. And instead of 3 T of molasses, I used 1 T of molasses and 2 T of brown sugar. Since I live in a country where you can only get HOT chili powder, I used about 1/2 teaspoon. It turned out pretty good. My 18 month old loved it!

Chewy Brownies

This is the BEST brownie recipe. I have been making it for over a year. Perfectly chewy! I always half the recipe because I can't stop eating them. Take note: if you up the cocoa powder, you have to decrease the flour. Too much dry ingredients will give you a more cake-like consistance.

Good Old Fashioned Pancakes

This is the best pancake recipe!!! The only change I made was to use 1 cup white flour and 1/2 cup whole wheat flour. At first the batter seemed thin, but once it hit the pan it puffed up nicely.

Baked Teriyaki Chicken

I followed the ingredients for the sauce as written but used boneless skinless thighs. Instead of baking, I cooked it in a pan because I didn't have time to bake it. It was so good. Will definately make it again.

Jo's Rosemary Bread

This is the second time I have made this bread. The first time, it was a bit dense. But today it was perfect!!!! I had to adjust the spices a bit because I didn't have a full tablespoon of rosemary. So I added more oregano, basil and thyme. Delicious!

Easy Apple Cinnamon Muffins

My 3 year old daughter requested Apple Muffins, so I tried this recipe. She loved it!!! I loved the chunks of apple. As with most reviewers, I didn't fill to the top of the cups, only 3/4. That was perfect. Also, the batter seemed dry so I squeezed the juice of one orange into it. Added some vanilla. Used 1/2 cup white sugar and 1/4 cup brown sugar. And I didn't bother with the topping. The next day I didn't have enough apples, so I used canned peaches. That was nice too.

One Bowl Chocolate Cake III

This turned out light not dense for me. Perhaps it is because I sifted the flour and cocoa powder. It taste just like a box mix... which I didn't mind at all.
