Strawberry Oatmeal Breakfast Smoothie

Super quick and super easy! I find that the banana and strawberries combined with vanilla soy milk make this plenty sweet, so I omit the white sugar and vanilla altogether.

Vegetarian Sloppy Joes

Cream-Braised Brussels Sprouts

What a delectable dish! I did make a couple of simple additions that I think played a major role in this turning out so outstanding; I sauteed about 1/2 cup of finely chopped onion and a couple cloves of minced garlic in the butter and THEN added the brussels sprouts. I allowed the brussels sprouts to get almost charred on some spots before adding the cream, which ended up giving this dish a caramelized taste. This could not have turned out any better! I will be making it frequently.

Homemade Black Bean Veggie Burgers

These are really great! Dense and satisfying while also being healthy, I found these very easy to throw together. This recipe is also quite simple to modify (ex: I tossed in a jalapeno and used a chili garlic sauce rather than hot sauce). I used an oven to bake these and they turned out just fabulous--no problems with them falling apart, perhaps because I took the good advice of other members and added extra bread crumbs. I'll be making these often!

Idaho Fry Sauce

A Utah native, I KNOW my fry sauce, and this recipe is awesome!! My husband and I just polished off what was supposed to be a half sheet of leftover potato wedges thanks to this stuff. Truly delicious!

Creamy Slow Cooker Potato Cheese Soup

This was just the "comfort-soup" I was hoping for! I omitted the bacon and found it necessary to add extra chicken broth (I used chicken broth where the recipe called for water and chicken soup base). Also, since it was comfort food I was after, I wasn't shy with using a lot of extra sharp cheddar cheese. I garnished with homemade garlic croutons--the perfect addition. Delicious recipe!

Carrot and Ginger Soup

This soup was a very tasty departure from the kinds of flavors I normally gravitate toward. I used pre-cut, cubed butternut squash, available in the refrigerated part of the produce section. I tossed that with olive oil, salt and pepper, and several cloves of minced garlic, then roasted it in the oven for 35 minutes. While the butternut squash baked, I sauteed the onion and a couple cloves of garlic in olive oil, then added the chopped carrots to saute for another 4-5 minutes. I then combined ALL of the ingredients in a slow cooker, and cooked on a low heat for 5-6 hours, then pureed in my blender. (I should also mention that I used vegetable broth instead of plain water.) The depth of flavor was so fantastic that I didn't add the cream for fear of ruining what was already pretty perfect on its own.

California Coleslaw

This is the best coleslaw I've ever had! I'm grossed out by slaw that is creamy from mayo, so I love this simple, clean marinade. I made this 6 hours before serving it which allowed the flavors to develop while keeping the cabbage a perfect crispness. Really great!

Sweet Dinner Rolls

These rolls are as awesome as the 5-star rating implies! I was initially unsure about making these because of the word "sweet" in the title, but this dough is just right for dinner rolls. I mixed the dough by hand since I don't have a bread machine (or even a KitchenAid), so in addition to getting amazing rolls for dinner, I also got a serious bicep workout :). Delicious recipe! I'll definitely keep this one close at hand.

Fabulous Fried Cabbage

I give this recipe five stars because it's incredibly easy AND really tasty. Great as written, but also turns out well using vegetable broth instead of chicken broth for the vegetarian-minded.

Spicy Three Pepper Hummus

This is the best hummus recipe I've tried yet! For me, the balance of flavors was spot on (I err on the side of spicy and garlicky). I found the texture to be just right, too--not overly creamy, not too dense. This recipe gets two thumbs up from this avid hummus fan.

Beans, Some Like It Hot!

I like this recipe, but, MAN it's salty! I've made this twice and both times found the salt overpowering (and I'm not one to shy away from the salt shaker). Good flavor, otherwise. I'd just recommend using half the salt the recipe calls for and adding more if necessary after tasting it.

Flourless Peanut Butter Cookies

These sounded too good to be true, but they're as good as everyone is saying! Sooo easy, and so good! I used Adam's peanut butter and the cookies turned out delicious, but were even better when I sprinkled the tops with a little salt ;).

Cuban Black Beans I

Man, these are good! I used three cans of black beans instead of starting with beans from scratch and also made things easier by using a can of diced green chilies. Loved the flavor--I found the balsamic vinegar to be a great touch. These are great on their own or with tortilla chips. I'll be making these again for sure!

Easy Pizza Sauce III

So EASY! This is a really great sauce for how simple and quick it is . I used only 8 oz of tomato sauce and in addition to the other spices added a tsp of salt, a couple pinches of red pepper flakes, and a few shakes of cayenne pepper. This sauce is better than the more time-consuming ones I usually make.

Addictive Sweet Potato Burritos

These are outstanding! The recipe is great as written, but these burritos also turn out delicious when the ingredients are switched up (ex: mix in black or pinto beans with the kidney beans). I like to season the sweet potatoes with a bit of cumin, cayenne and chili powder. I often make big batches of these and freeze them--heat in the microwave for about 90 seconds on both sides.

Sugar Spiced Almonds

My husband went nuts over these! I prefer things spicy so if you're the same I'd recommend going heavier on the cayenne. Also, since I prefer salty to sugary, I cut back on the sugar a bit and added a little extra garlic salt.

Coconut Tofu Keema

I LOVE this recipe! I make just two adjustments; to make it a little more saucy, I often add more coconut milk (either canned OR the kind that is refrigerated and comes in a carton). I also only use one 8-ounce can of tomato sauce--the first time I made this I used the full six cups the recipe calls for and it was WAY too much for my liking. Excellent dish! Great served over brown basmati rice. Perhaps even better as leftovers the next day.

Cream Cheese Frosting II

Garlicky Baked Butternut Squash

These are great. I made them without the cheese since I'm on a no dairy kick, and they turned out delicious. This recipe was especially effortless since I bought the butternut squash pre-cubed. A healthy and tasty side dish.
