Mediterranean Pasta with Greens

It was pretty good but not that exceptional. We did make our pasta from scratch and that added a great fresh component. We made fetucine as fusili is a bit more advanced than we're ready for. We also added more olive oil to coat the pasta a bit more. We probably had too much pasta for the ration to be right.

Insalata Tricolore

So delicious. I added some fresh squeezed lime juice to the avocados because I was nervous they would brown before I served the dish. That, paired with balsamic was really nice. This was devoured.

Fresh Blueberry Pie II

This turned out great! My first pie and there wasn't a crumb left. To make the latice top, I bought two frozen pie crusts. While one was baking, I let the other thaw and then sliced it into strips and laid them across the top. Then, once the pie was finished, I stuck it in the oven for about 15 minutes at 400 to bake the top. Served with french vanilla ice cream. Amazing.

It was good but with all the cheese and stuffing you couldn't taste the veggies. Was a little more "indulgent" than I would like.

Really didn't like this. I used whole wheat tortillas and veggie cream cheese. The cream cheese was awful and the tortilla got so soggy.

Spinach Quiche

I really liked it! I skipped the mushrooms and used feta with sun-dried tomatoes. I also used 1/2 and 1/2 instead of milk. Came out really delicious!
