Debdoozie's Blue Ribbon Chili
I am giving this 5 stars because the salsa is pure GENIUS! I added onions, peppers,celery,and plenty of extra seasonings in addition to the whole packet of chili seasoning (like I always do) and almost a whole jar of Pace salsa (which I have NEVER done.) Then, I won the chili cook-off at our local country club yesterday! Who doesn't love salsa? And, I think the vinegar in the salsa gave it just enough zing to be interesting and stand out a tad, while still being traditional chili. Thanks, Deb!

Slow Cooker Carnitas
This was the best and closest to authentic tasting Mexican food I have ever made! My pork roast was only about 2 1/2 pounds so I didn't use the whole 2 cups of broth, but I will next time, as it is this juice with the awesome seasonings mixed with the shredded meat that gives it such a kick. It was frozen when I started so the seasonings didn't really stick to it, but it didn't matter. I thought the cinnamon would be off-putting, but it wasn't at all. This would have made a good tamale filling, if I were more ambitious, but it made hellacious soft tacos and was SO easy! YUM! Thanks for the recipe!

Green Beans with Cherry Tomatoes
YUM! I was only making enough for myself, so I estimated on amounts...I used a little less sugar than my scaled down version probably called for and added olive oil to cut the salty taste because I used salted butter - this sauce was to die for and I am not ashamed to admit I licked the bowl! Next time I will throw some shallots in the mix. Great way to use up my garden goodies! Thanks, PeanutPutter.
