About this Cook
I am a mom of three kids. I started cooking more when I met my husband because he'll eat anything I make and really appreciates the dishes that come out really well. I like to cook on weekends when I have more time to put into it. My favorite thing to do on a Saurday afternoon is pour a glass of wine and hole myself up in the kitchen making a nice dinner.
My cooking triumphs
Thanks giving 2005 - I tried about 5 new recipes, plus it was my first turkey! Everything came out great - my husband still talks about it. Xmas 2007 - tried new recipes and they came out wonderfully - can really see my growth in the cooking arena.
My cooking tragedies
Summer 2005 when the in-laws came to visit - I made barbecue chicken breasts on the grill and somehow burned them beyond recognition. I wanted to call for pizza, but my husband insisted on serving it. So we all chewed away while drinking plenty of water - very reminiscent of the turkey dinner scene in National Lampoon's Christmas Vacation!

Slow Cooker Pork Chops
I tried the basic recipe, and it came out really well, everyone liked it. I will try other user-suggested additions later, but the base recipe is a really nice, simple way to cook pork chops.

Zucchini Bars
Very good recipe, although I have to say I would call this Zucchnini Cake due to the texture. To me, bars are more chewy. That being said, I have had rave reviews on this recipe. My family loved the first batch, so I made another to take to a picnic and they were a hit there too. I tried adding some spice to the second batch like some users recomended, but it didn't seem to make a big difference in the taste - maybe I didn't add enough. However, I like the taste of the original recipe anyway - I think if you add too much spice it would overwhelm the taste of the batter. The frosting was a little too sweet for me, so in the second batch I added the confectioners sugar a little at a time and tasted as I went along - I ended up using far less than what was called for, I'd say about half. The second batch of icing was much less sweet and I thought a perfect topping for the bars. Bottom line is this is a good recipe to make as is or to tweak to personal preferences. And DEFINITELY squeeze the water out of the shredded zucchini - it made all the difference in the world.
