About this Cook
My full time job is a catering manager at a private school. I also write for Examiner.com. I am currently the Norfolk Cooking Examiner as well as the Norfolk Pit Bull Examiner. My 2 passions in life are cooking and changing peoples minds about Pit Bulls. To check out my cooking articles, follow this link: http://www.examiner.com/x-4180-Norfolk-Cooking-Examiner
My favorite things to cook
Chicken because of its versatility; seafood; fatty, cheese-filled Italian dishes; homemade mac and cheese; cookies
My favorite family cooking traditions
1 word: PORK. Every Christmas, my grandmother makes her famous lasagna, meatballs, sausage and pork. I've never seen a huge, loud Italian family be so very quite at the dinner table...except when we're fighting over the last piece of pork.
My cooking triumphs
My famous cheesecakes to which I will never give out the recipes to. Sorry people.
My cooking tragedies
Thanksgiving Day, cutting into the pumpkin pie to find the crust on the bottom totally raw when it had not been a few hours earlier! Can a pie crust just uncook itself?

Crescent Pizza Pockets
What a nice quick snack! Instead of putting the sauce on the inside, I made it more of a calzone with a touch of ricotta cheese. I brushed the top with olive oil and sprinkled on garlic salt and parmesan cheese. Yum.

Fresh Blackberries and Cream Ice Pops
Delicious and easy to prepare! I couldn't find any ice pop molds at WalMart or Target (??) so I just made straight up ice cream. I didn't fully incorporate the blackberry puree because I wanted the contrast between the white frozen yogurt and dark fruit. I will definitely try this again, maybe with raspberries and some dark chocolate chips :)

Eggplant Slices, Tomatoes, and Mozzarella
Delicious Summer side dish! Because my oven isn't working I wasn't able to bake it, but I served everything room temperature and it was great. Instead of just flouring the eggplant, I dipped it in egg and then bread crumbs before frying. I layered up the ingredients into a stack and dressed it at the last minute with the vinaigrette. Delish!
