Strawberry-Melon Summer Salad

Quick and Easy Vegetable Soup

This is a great base for any vegetable soup. I was low on fresh vegetables right after the holidays. I substituted with one large can of Veg-All and one pint freezer bag of peas and one of butter beans. These came from my step-dad's garden. I used culinary beef stock as I was out of chicken. I didn't add water. I seasoned with one tsp Italian seasoning, one tsp of poultry seasoning, one tsp Ruth Ann's Muskego Ave Chicken & Fish Seasoning by Penzey Spices, and 1.5 TBSP of Lea & Perrins Worchestershire Sauce. Lastly, one large clove pressed fresh garlic.

Black Bean and Couscous Salad

I made this last night. I doubled the dressings as many reviewers suggested. My husband said that it was absolutely fabulous.I took one reviewer's advice and rinsed the beans well. I didn't have green onion but chopped up about 1/4 small vidalia onion. I was also was out of frozen corn but substituted an 11 oz. can of vacuum packed niblet corn kernels. Also, the only cilantro that I had was freeze dried. It was still fabulous so I can only imagine how great it must be if you can follow the recipe exactly.

Meatball Nirvana

I found this recipes a few years ago on this site. Everyone in my family loves it. When my son married two years ago, he made sure that he and his new wife got a copy and it is also a staple in their home. I always serve it with my home made sauce. I prepared these last year when my sister-in-law came from out of town. She ate them plain and just raved about them. You can't go wrong with this recipe. I try to watch salt content or all of my recipes so I use garlic powder instead of garlic salt. Also depending on who is eating with us, I sometimes decrease or omit the red pepper flakes.

Parmesan Baked Potatoes

These potatoes are fabulous, easy, and something that you would expect in a fine resturant. I made exacly are suggested except I did not have red potatoes so I used small russets. I took one reviewer's advice and lightly sprinkled crushed rosemary on the melted butter. I sevred this with steak at a dinner party and had rave reviews even from the picky eaters.

Surprise Cake

This is cake nirvana! This is the best cake ever. I used coffee instead of water as suggested by other reviewers. The recipe as written calls for 1/2 tsp cayenne pepper so I am not sure why others tried 1 tsp. cayenne. The frosting was perfect as written so I am not sure why others thought it too thin unless they did not allow the cake to cool competely.

Pork with Peach and Black Bean Salsa

I made this for the first time last night. It is fabulous. My husband and son raved about it. Since I am a working Mom, I sliced the pork, coated it with cornmeal seasoned with fresh ground pepper, and browned it the night before. The next night I completed cooking the dish within 20 minutes.

Baked Beef Stew

This is an absolutely fabulous recipe. My entire family raved about it. I plan to cook this often. Because I work outside the home, I cooked this the night before and reheated the next day for 30 minutes at 375 degrees and it was outstanding. Elizabeth Randall
