Ham and Wild Rice Quiche

Pork Chops with Raspberry Sauce

FANTASTIC!!!! My Husband who has a very small appetite went for thirds before rolling over to the couch. He said he thought it was the best meal I'd ever made. I served it with mashed potatoes and gravy, and a recipie for Italian peas I saw on here. Definately one of my favs, even my picky 5 year old cleaned his plate. The sauce was rather thin so we used corell dishes and dipped our pieces or pork chop. Yummy!!!!!

Meatloaf California

Awesome meatloaf. We've never used oats before. We also added some italian bread crumbs since you can never buy a pound of ground beef it seems and its always over. My husband also added a little barbeque sauce with the topping (because he cant leave well enough alone LOL) I tried it with the BBQ sauce and with out and it was both really good. Awesome with the red onions too. I'll definatley make again!

Irish Chicken and Dumplings

So easy for a weeknight if you do it in a slow cooker! The dumplings were a little too much, I would use less as it was pretty much all dumplings with those measurements. Next time I'll try doing biscuits on top like someone else suggested. The chicken though was outta this world!!! This is one of the few time I didnt and wouldnt change a recipe. I would make this as a stew too and add over rice. I added a little more salt. I read other reviews that said it was bland, this is not the case! A recipe is only as good as your ingredients, dont use knock off soup and expect it to be great. Spend the extra fifty cents and spring for the campbells!

Raspberry and Almond Shortbread Thumbprints

These had a great taste. But watch out that you dont make you dough to arge because the really spread out. Next time I'll make sure that I put the on the cookie pan so they're skinny and tall so the hold the jam. I used blackberry and rasberry. Yummy!

Carol's Chicken Salad

We loved this chicken salad. So tasty!!! I did omit the water chestnust and added walnuts like others suggested also used chunky apple sauce instead of the apples that I was going to use because it seemed to dry if you wanted to put it on a sandwich and I didnt want to over load it with more Mayo (my husbands suggestion and right on). Delish!!! The more I make this the more I get asked for the recipe! So yummy!

Roasted Chicken with Risotto and Caramelized Onions

Awesome recipe. I used 2 sweet large onions. And topped with fresh grated parmesan cheese. So delicious. My family at it all immediatly and requested for it to be added into the fav meal rotation. I will definatly be making this again. Although I agree it need to be pulled off the stove before the last cup of broth is absorbed and it did take me 30 mins to cook. May a slighltly higher heat next time. Thank you so much for sharing! I served with Garlic bread and a salad for a complete meal. Now to find a big enough pan so I can double it and have left overs!

Maple Salmon

Excellent Marinade!!! I used frozen salmon which I didnt particularly care for. But the sauce made it palatable! I will make this again using fresh salmon instead. I did add some dill which not only enhanced the flavor but spruced up the way it looked as well. I also had fresh maple syrup from Vermont which drastically increased the flavor of the marinade. This would also be tasty on pork chops or for kabobs! I made this again with a better salmon and it was just to die for!!!

Chicken-Stuffed Shells with Sherry Sauce

I used a rotesseire chicken breasts for ease. Rich and delish. This is probably the first recipe in the history of my all recipes that I will always make as written with out saying it could use this or that.

Manicotti Alla Romana

Wow and I mean wow. This got rave reviews!!! I made it for Valentines day dinner, and it was soooo worth the work!! I premade it the night before and used a sugarfree sauce as authentic italian dishes do not use sugar in they're tomatoe sauce. (I lived in Naples Italy for 3 years). It worked beautifully with the white sauce that I hesitated to add because it tasted like a chicken in a bisket cracker. Fear not if you taste it!! Works great as a make ahead, I also used half ground chuck and half italian sausage as others suggested and it was fantastic. I was requested to make it for my inlaws this coming weekend.!

Prosciutto Wrapped Asparagus

I made this as an appetizer to a Manicotti alla romano recipe I found on here. It paired perfectly! I used a creamy goat chesse as no supermarket or Gormet store in my area carried that type of cheese. My husband LOVED it!!! I only wrapped the proscuitto in 2 pieces of asparagus... next time I will do 4 as it was a little salty... I didnt blanch it, it didnt need it at all it was fully cooked and crisp. Next time I may just use cream cheese to spread. I also made prosciutto and fresh mozzerella cheeseon a fresh bay lef with a little salt pepper and olive oil..... this helped cut the saltiness of the asparagus. I may do melon wrapped in proscuitto next time as well.

This is a dish I was often served in my 3 years living in Italy and I have to say never did they use mint... but it was interesting. I tried some mint on one and decided to leave it out. Superb after that!

Clark's Quiche

This is my first low rating. It was terrible! And I love quiche, and spinach! I ended up putting ketchup on it to try to make it better. I'm embarrased to have served it to my family. I'll stick with the wild rice and ham from this site. If I could give this a lower rating I would. Leaves a bad after taste in your mouth and the flavors do not blend well... at all. I see most everyone who gave it 5 stars altered the recipe then rated it... I made it exact, but I'm glad I only made one.

Baked Pineapple Casserole

Awesome recipe!!! We ate this with a spiral ham and the kids adored it!! My husband didnt care for it but he's not into any cooked fruit. Ther leftovers were warmed and served with a scoop of ice cream over top. Its safe to say I will be making this again.

Caprese Salad

If you have a little Italy or a gourmet shop that gets in fresh buffalo mozzarella use it!! I dont suggest using polly-o but it would work in a pinch, any fresh made is better than prepackaged. I lived in Naples for 3 years and this is the perfect example of a Caprese salad.

Garlic Chicken Fried Chicken

I made this with chicken breasts because my husband hates to each chicken off the bone. It was wonderful! He asked me to save the recipe and make it again. The only thing I added was some sea salt. This is a keeper and will go in to our family recipe book!
