Corned Beef Hash

I'm not a fan of hash myself but my family thought this was terrific. I made as stated and added an extra 3/4 cup broth. I wouldn't suggest cutting back the potatoes as it would throw off the corn beef/potato ratio and there was certainly plenty of that.

Italian Sausage, Peppers, and Onions

Excellent. I grilled the sausage first then added them to the pan without slicing them. We served in hoagie rolls with all the veggies over top. These were the perfect sausage sandwich.

Ranch Burgers

these were excellent. The crakers made them sorta light and airy. I do think I may cut the crackers in half next time or better yet use ranch doritos. I mixed everything in the night before, the flavors absorbed really nicely. Next time I will add another package of ranch mix and see what that does for it.

We didn't care for this recipe. It tasted like flour, thats all just flour. I suggest using butter and less flour.

Linguine Alfredo

We enjoyed this quite a bit. I made small changes. I used half parm half asiago cheese and I sauteed green pepper with the garlic. I topped with some left over chicken from kabobs. Wonderful and easy.

Chocolate Chocolate Chip Nut Muffins

I love the way this recipe lets you delude yourself into prending your not eating chocolate cake for breakfast. =) These were very good and east to make. It did yeild 16 very full to the top "muffins". Needless to say the kids went nuts for these too.

Chili Mac Casserole

Very good. We used black beans instead of kidney beans and diced tomatoes with green chilies instead of adding the chilies and diced tomatoes separately. A good quick and easy meal that would go really well with a side of cornbread.

Lemon Streusel Muffins

These recieved mixed reviews in my home. Some gave it 5 stars, others 2 or 3. I used chopped pecans as the nut. I think it would be alot better if some of the nuts were mixed through the muffin. Personally I didnt care for the nutmeg, I think I'll leave that flavor for my pumpkin pie and maybe use poppy seeds instead.

Perfect Baked Jerk Chicken

This was awesome!!! I omitted the cayenne pepper and replaced it with paprika and some seasoning salt because my kids (who ate way more than usual) cant handle anything even remotly spicy. I also just used powdered garlic. My husband was a firm believer that he didnt like jerk anything has changed his mind. This goes in the folder of things I highly recommend and will make agian.

Fairy Godmother Rice

I'm sorry I let this recipe sit in my box so long without making it. This was excellect. My picky middle child went back for fourths!!! I didnt have thin egg noodles so I used wide and really liked the difference in sizes. I also left out the water chestnuts since I'm really not crazy about them. I prepped and added it all an hour before I popped it in the oven so it took less time. I also covered it because my oven burns anything I dont. 100 stars all the way (per my 3 kids). This does actually make about 10 normal servings. Next time I will cut it in half for out family of 5. This went well with baked jerk chicken.

Peanut Butter Bars I

These are so much like Reese's peanut butter cups! My kids and co-workers went nuts for these. I only had 1/2 cup semi sweet chocolate chips so I subbed the rest with milk chocolate and it turned out fine.

Key Lime Pie VII

I added a bit more lime juice (like 2 tbs) because I do like mine a bit more tart. Perfect density, smoothness and the pie didn't suffer at all from the omission of the traditional egg yolks. The measurements were also perfect for a 9 in pie!

Chicken Flautas

I agree with the another reviewer to broil the chicken in sauce with some taco seasoning before shredding. My husband started this before I got home and just boiled and shredded the chicken breasts so they were a bit plain. Newman's own mild salsa helped cope with that. I also recommend sprinkling the rolled tortilla's with so onion salt. All 3 of my kids loved these. I cut the recipe in half for 5 people and served with yellow rice, mexican corn and re-fried beans. Update: used the filling from Angela's Awesome Enchiladas and this recipe will rock!

Slow Cooker Cranberry Roast

I made this as written with the exception of choosing to use the ocean spray whole berry cranberry sauce. I'm extremely surprised how much juice this created in the crock pot with out adding any liquid at all. I did use a beef chuck roast but I can see how this would be terrific with pork as well. For those who had trouble with the butter and flour. Its a roux so: In a 2 cup glass measuring cup melt your butter in the microwave the add flour and mix with fork. Then slowly ladle juice from the crock into the cup and mix with fork. It will thicken almost immediatly. Continue until you have added enough to make 2 cups making sure your smoothing it with for in between adding liquid. Then add to crock pot, this will ensure your gravy (which is amazing) does not clump. If you choose to use cornstarch dissolve cornstarch in water prior to adding to the gravy mixture. I also suggest cutting back the cornstarch to 1 tbs and not simply subbing it for the flour as cornstarch thickens at twice the rate of flour.

Cranberry Applesauce Muffins

These are fantastic. Unfortunatly I cant find either fresh or frozen cranberries at this time of year so I used a frozen mixed berry mix with raspberries, blueberries, strawberries and blackberries. I used half light brown sugar and half with. All I had was cinnamon applesauce so I just used it instead of plain and I did keep the added cinnamon in the batch because in my house we love cinnamon. These were dense which I know is from the applesause but very good. I cant wait to try them with fresh cranberries.

Breaded Toasted Ravioli

This was good but it has a lot potential to be made great. I added a little garlic powder to the bread crumb mix and since plain bread crumbs were not specified I used Italian and added the spices listed. I also spray with pam olive oil spray. The egg wash didn't look to be nearly enough but it was perfect. My recommendation is to use fresh not frozen ravioli and maybe brush EVOO on or add a bit to the egg wash so its not so dry. Lastly I highly recommend turning your ravioli on the rack half way through. The underside was still a bit soft and undone with the top was perfectly browned.

This didn't get as thick as thick as I expected form the pictures but it was delicious and extremely easy to make. I left out the fresh parsley and it was just divine.
