Too Much Chocolate Cake

Wow the recipe is soooooo good!!!! I cant wait to make this for my chocoholic mother in law. I will try mini chocolate chips next time.I used a chocolate fudge pudding. Some people complained of the cake being overcooked on the outside so I loosely covered with foil while baking and dropped the temp to 325 after the first 30 minutes. After cooling in the pan for an hour I put it in a glass cake dome and covered letting it get steamy in hopes to make it extra moist. I topped with Marshmallow ice cream topping from this site and a sprinkling of graham crackers to make a S'mores cake. Needless to say my kids were singing "mom is great, she gave me chocolate cake" and scarfing it down.

Orange Glorious I

Grilled Peanut Butter and Jelly Sandwich

I've never been a big fan of pb & j sandwiches, I know I'm weird but this totally changed it for me. My kids thought they were awesome as well and gobbled them up.

Spicy Garlic Lime Chicken

The only thing I changed was to cut the cayenne pepper in half as I have kids and didn't want it to be spicy for them. This was so good and so easy a 3 year old could do it, no really my daughter (almost 3) made this I measured the spices she pounded the chicken and rubbed in the spices and poured the lime juice in and sprinkled the garlic. It was delish. My husband dint care for it as much, said it had to much lime and while I think he's crazy next time I'll do his in a separate pan with just a couple shakes of lime juice.

Uncle Mac's Peanut Butter and Jelly Cookies

I didn't have an issue with the cook time but I know my oven runs a bit hot. 8 minutes made mine perfect. 1 batch gave me 24 cookies. I did use jam instead of preserves and the got a little mushy in the center and spread. Next time I will have preserves on hand. Super simple and tasty!

Karyn's Cream of Crab Soup

My husband made this tonight and all I can say is WOW. I didn't want to stop eating it and I cant wait to finish it off at lunch tomorrow. He used half of the old bay and chopped up some shrimp to add in which made it even yummier. I will be making this again in the future and I will try adding some bay scallops as well as salad shrimp. If I could rate this 50 stars I would. Definitely a recipe to write home about!

Easy Apricot Chicken in a Pan

The sauce needed to be thicker. I would add another tbs of cornstarch. I cut the chicken down to 1 1/2 pounds and added a fresh stir fry mix of snow peas, broccoli, and carrots. I didn't have apricots (just the jam) so my husband suggested throwing in some raisins instead. I'm glad he did I think its what made it as good as it was and no chopping apricots. We do much prefer the apricot Glazed Chicken from this site which is very similar. Another tbs cornstarch, a tbs of soy sauce and mare another 4oz of jam or a little less broth and this would be 5 stars all the way.

Easy Cajun Jambalaya

Made this in honor of Mardi Gras and fat Tuesday. I have 3 small children so I used only half of the called for cayenne pepper. We also threw in a couple handfuls of shrimp and any jambalaya I've ever had used tomato paste so I threw in a 6 ounce can. The broth / rice ratio is off. 2 more cups are needed to have it cook correctly. Always 1 part rice to 2 parts water. This resulted in an extremely tasty recipe that all my kids and my husband loved. Serve with cornbread for true Louisiana fare. I also added to hot sauce in the end straight to my bowl. I had plenty of zip for me with that and was very mild for the kiddos.

Peanut Butter Pie I

Okay I cheated and took a few shortcuts being pressed for time. I bought a premade oreo crust (which can be found in the baking aisle) and used and 2 cups cool whip instead of whipping my own. 45 minutes in the freezer had it chilled perfectly. This pie was nothing short of heavenly! Everyone loved it! Its super rich so served with a tall glass of milk and keep in mind a little slice goes a LONG way!

Salmon Mac and Cheese

I found this to be a little dry. Next time I would add a can of campbells cream of cheddar soup. The flavor was great the old bay was perfect. Being a salmon lover I could also add more and be very happy. My previously non fish loving boy ate it exclaiming over how good it was, actually all 3 of my kids did. I ran out of bread so I crushed ritz crackers with the parmesan cheese and it was great.

Bake Sale Lemon Bars

Wow so many conflicting reviews! So I made the recipe as is except for increasing the lemon filling by 50% because it just didn't look like enough. It probably would have been but I like the semi gooey middle so I think I'll stick with it. Only one of my kids liked it but I think lemon is subjective and both us adults thought it was fantastic. We are southerners at heart and so prefer the sweeter version like the original recipe.

Blueberry French Toast

Chicken and Pasta in a Mango Cream Sauce

Excellent dish. More of a 4 1/2 stars. I did add and extra chicken breast and some extra mango. I bought a fresh mango and jarred and used both. My fresh wasn't as ripe as i would have liked it to be and the jarred was a little mushy. I guess the key is buy fresh and simply wait it out until it ripens. I did need to triple the parmesan cheese and add a little more salt after tasting. I also added so cilantro (just a pinch) as well as paprika to the cooking chicken. Its safe to say this will be added to dishes we really like and will make again at some point in the future. I served with a nice spinach salad and garlic bread from this site.

South Carolina Sweet Tea

I never knew how easy it could be to brew tea in a coffee maker. Our favorite is raspberry it always turns out fantastic, you do have to adjust the amount of sugar depending on the flavor of tea 1 1/2 cups we found is perfect for the raspberry. My kids have a blast taking turns picking out flavors. We've made Blueberry, Black Berry, Black Currant, Apple Cinnamon, and next we're trying peach. My husband the Coca-Cola addict who would drink 3-5 cans a day has cut down his soda comsumption to 1 a day if that thanks to this recipe. With the 5 of us we usually have to make a gallon every other day. I disagree with the review below me. My tea has no bitterness at all but I clean my coffee maker including the filter portion so there is no residual anything.

Restaurant-Style Coleslaw I

This recipe was divine. Best coleslaw I have ever made. I shredded my own cabbage along with some carrots and green onions. I let it sit for an hour and served it with pulled pork off of this site. I can imagine the would be even better if it were to sit over night. I will never buy coleslaw from the store again.
